Hawaiian BBQ Chicken Thighs Recipe

Good morning and happy Wednesday!  Today I will be catching up on blog posts because tomorrow I will be going to the doctor to determine what this cough is all about and then doing a few errands and Friday, Jace comes home! It's been a long few weeks without him.  A few nights ago I made this Hawaiian BBQ Chicken Thighs recipe. Although delicious, it was fairly sweet. If you don't like sweet BBQ, I suggest lowering the levels of Pineapple Juice in the recipe. The original recipe is from Air Fryer Yummy Recipes (although this is not an Air Fryer recipe). Besides the pineapple juice measurement, we also used garlic powder instead of minced garlic. Next time I think I will cut back on the Pineapple Juice and maybe do 1/2 cup instead of one cup. I tend to lean toward less sweet but I still enjoyed this and it really brought out the Hawaiian part for me. Pepperoni Chaffle Recipes with Everything Bagel Seasoning

Good morning and happy Monday!  I wish I was happier, quite honestly, but being sick for almost six weeks has definitely taken a huge toll on me. I had COVID a few weeks ago and this lingering cough has been killing me. It takes everything out of me and makes me so tired within hours of waking up. I'll be honest, I took maybe two hours total off of work to rest and that was definitely not enough. Hopefully that didn't damage my body even more by not resting for five weeks. I love being productive and being busy so it's very, very hard for me to just stop and relax. The last three nights I have gotten more than nine hours of sleep per night with a sleep quality score over 84 so that's actually really, really good for me. As for medication, I have done it all - cough syrup, Mucinex DM, Robitusum DM, tablets/pills, warm water and honey, warm water with honey and lemon, nothing has worked. I called the doctor's office today who said they recommend I do a walk in and see

Homemade BBQ Chicken Pizza

Has anyone else been watching the Olympics like crazy, or just our household? I swear we have the Olympics on all day, it's been so fun to watch! A few nights ago we made this Homemade BBQ Pizza and it turned out way better than I thought it would. The original recipe is from Family Cookbook Recipes  and we did make it our own - we used regular BBQ sauce instead of spicy, no pepperoncini peppers, onion powder instead of red onion and no cilantro. It was super easy to make and this one will be on repeat. Also, we had 3-4 slices leftover so another 3-4 serving dinner. I love making homemade pizza, it's so much healthier than regular pizza and you actually know what ingredients are going on it. I purchased the pre-baked pizza crust from Albertsons and this recipe was really easy to make. Easy Taco Mac Recipe: A Delicious, Flavorful Recipe

With Jace gone in Phoenix for the next week and a half, Kevin and I cooked together last night. We made this easy taco mac recipe, the original recipe coming from Alice Kitchen on Facebook . I'll admit, I feel like it's been so long since I've actually cooked. We were using Every Plate for so long and decided to go back to homemade cooking and meals.  This Taco Mac recipe was almost cut in half and there were still leftovers for us to have a whole meal each (4 servings). I have the cutest/funniest story. I sent Kevin to the store to get macaroni pasta shells for dinner. He comes back with a box of macaroni and cheese. He ended up going back for the right pasta but I guess I should have been more specific:) We did change this recipe around a little bit. We added half the beef and half the pasta. Happy Saturday! I was supposed to be in Arizona right now enjoying the heat, pool and family, but I am on week 4 of my cough (I had COVID for two weeks and a cough almost the entire time) so I decided to stay home for a few days while Kevin and Jace went. Let me tell you, it is SO weird having the house to myself for even a day. I don't know if I like it or not. Since they are gone, I decided to catch up on a blog post (and putting housework on hold ðŸ¤ª) I'll admit, I have not been eating the healthiest and, although I should have stayed home and rested, I did promise Jace the fair and between appointments, and me not wanting to cook, I've gained more weight the past 4 weeks than I would like to admit.  Before Kevin and Jace left, Jace help me make this somewhat healthy empanada dinner with homemade dough - which is made of cheese. The perfect crispy parmesan chicken recipe

  Thank you for your interest in this crispy chicken recipe. I only took one photo because I did not plan on making this a blog. I have been sick for the past 4.5 weeks (COVID for two weeks and then COVID cough ever since) and haven't particularly been in the mood to cook, take photos, or even make dinner. I made this about a week ago and I didn't realize it would turn out so good. I tend to burn the chicken and, as you can see, this chicken turned out so good and so crispy so I thought I would pass it along! I used some of a Southern Living recipe for Parmesan Crusted Chicken but adjusted it to make it more of our own. My full recipe is below. Step 1: In a bowl, combine 1 cup of panko breadcrumbs, 1oz of parmesan cheese, 1/2 cup flour, 1 tbsp fry seasoning, 1 tsp garlic powder and pepper in a bowl. Mix to combine. In another bowl, add one egg.  Step 2: Cut chicken into thin slices. I usually buy thicker chicken breasts and then cut them in half horizontally to make them thin.

Chocolate Chip Energy Bites

You may or may not have noticed, but I haven't posted a blog since March. There are several reasons for that. The first one is we started moving our dinners to EveryPlate (weekly meals delivered to your door, healthy ingredients and they only take 20-30 minutes to make) which has been amazing because I can choose meals that our family will love and I don't have to stress over what to make every week.  The second reason has been since January, Kevin has had really bad nerve damage. It got so bad that we had to go to the ER in Utah when we were there in March and he has been on short-term disability since April 4th. The final result from Kevin's MRI that he received, is he has a bulging disc and moderate stenosis so he has been in pain (but getting better) and is currently on several medications as well as doing physical therapy. His doctor has approved him to go back to work with one accommodation of not lifting more than 25 pounds but at this moment, his work is unwilling
