Chocolate Chip Energy Bites

Image
You may or may not have noticed, but I haven't posted a blog since March. There are several reasons for that. The first one is we started moving our dinners to EveryPlate (weekly meals delivered to your door, healthy ingredients and they only take 20-30 minutes to make) which has been amazing because I can choose meals that our family will love and I don't have to stress over what to make every week.  The second reason has been since January, Kevin has had really bad nerve damage. It got so bad that we had to go to the ER in Utah when we were there in March and he has been on short-term disability since April 4th. The final result from Kevin's MRI that he received, is he has a bulging disc and moderate stenosis so he has been in pain (but getting better) and is currently on several medications as well as doing physical therapy. His doctor has approved him to go back to work with one accommodation of not lifting more than 25 pounds but at this moment, his work is unwilling

No Bake Peanut Butter Protein Cookies

Image
This morning I was in the mood for something a little sweet so I made these protein peanut butter no-bake cookies from Madison who swaps out recipes for healthier ones. I love her recipes so check her out! I'll be honest, these are so different than regular peanut butter cookies but with added protein powder, they are made to fill you up between meals or as a post-workout snack. I used no sugar peanut butter instead of regular peanut butter and used healthier replacements such as almond flour, protein powder and coconut sugar. I had 1-2 of these at a time with a glass of milk. Nothing is more nostalgic than cookies and milk:) Ingredients: 1 cup no sugar added peanut butter 3/4 cup almond flour 1/2 cup Vega vanilla protein powder 2 eggs 1/4 cup coconut sugar Directions: Preheat oven to 350 degrees. Add all ingredients to a mixing bowl.  Stir well to combine.  Spray a cookie sheet and scoop cookie dough into 8 balls. Place on baking sheet.  Use a fork to press down on the balls in a

Air Fryer Bacon-Wrapped Chicken Skewers

Image
This Bacon Wrapped Chicken Skewer recipe was super easy to make and really, really, really good. The bacon was crispy and the chicken was perfectly cooked. I will definitely be making these again. I don't use salt in recipes so I did eliminate salt. Recipe inspiration is found through Fork to Spoon .  Ingredients: 1 pound chicken breast, boneless & skinless Pepper, to taste 6 slides of bacon Ingredients for BBQ sauce: 1 tsp Extra Virgin Olive Oil 1/2 cup BBQ sauce 1/2 tsp cayenne pepper 1/2 tsp garlic powder 1/2 tsp onion powder 1 tsp dried oregano 1 tsp dried thyme Directions: Wash and pat dry the chicken breast. Cut into cubes and season with pepper. Cut the skewers so they fit in the air fryer (we cut ours in half). Place the chicken cubes along the skewers (I was able to fit 4-5 on one skewer).  With the bacon, you can cut it in pieces and add to skewers or you can do what I did and just used one piece of bacon and just thread it throughout.  In a medium bowl, combine the o

Pumpkin Spice Protein Balls

Image
Good afternoon! It's been awhile since I have sat down and written a blog and there are two reasons for that. The first one is because the last three weeks seem to be so insanely busier than usual and I've been working 45+ hours per week. The second is because we started using Every Plate this past week so the meals are 20-30 minutes and we are provided with the right amount of food and servings, delivered to us weekly. Because of that, I've been making those recipes compared to other recipes that I have been finding. I don't plan on creating blog posts for Every Plate but I do have some that I have from previous weeks that I will need to catch up, including this one for Pumpkin Spice Protein Balls. This is another recipe from Madison .  If you like and enjoy pumpkin spice, you will probably like these.  Ingredients: 3/4 cup greek yogurt (I only had mixed berry which was fine but plain is preferred) 2 scoops of vanilla protein powder 3 tbsp almond flour 2 tbsp pumpkin p

Swedish Meatballs Recipe

Image
I made this recipe a few weeks ago but just now getting to write a blog about it. Inspiration found through Best Recipe Box . I always try and add a healthier touch to recipes, as much as I possibly can so my version is below. This recipe was enjoyed by my entire family, including 13 year old Jace. I love that he enjoys healthier options :) Sometimes he doesn't realize the healthier options I use but in this recipe, I included - whole wheat panko breadcrumbs, 90/10 ground beef (compared to 85/15 or 80/20, this one is way healthier), unsalted butter (we try and eliminate salt when and where we can), whole wheat flour, and low sodium beef broth. We also used milk which is way better than heavy cream (I didn't realize this until I looked at the carton but heavy cream has loads of calories). This was unlike the regular Swedish Meatballs recipe that I usually make but I liked it and will make it again. We used spaghetti noodles but you can also use egg noodles as well.  Ingredients

Easy Snickerdoodle Protein Bites

Image
I made another amazing recipe from the amazing Madison . Last week I made the Almond Butter Chocolate Protein Bites .  I tend to snack a lot and I'm trying to be more mindful of what I have for snacks. Using Noom, it stresses eating a protein snack between 150-200 calories to fill you up. These homemade protein balls/bites are just that. These, to me, taste EXACTLY like Snickerdoodle. So, so good! I will be making these again.  Ingredients 1/2 cup Almond Butter (I use Barneys) 1/8 cup Honey 1/8 cup Almond Flour 1 Scoop Vega Vanilla Protein Powder 1 Tbsp Cinnamon Directions: Add all ingredients in a bowl.  Stir to combine. Form the dough into balls. I made 7 of them.  Put them on a plate and refrigerate for 30 minutes.  I was able to eat these 1-2 at a time, lasting all week.  Please follow Madison King on Instagram if you don't already. She has some amazing recipes and I'm looking forward to making more!

Healthier Buffalo Chicken Dip

Image
Although this is a week late from Superbowl Sunday 2024, I did make this for Superbowl and it was enjoyed by my family! It was extremely easy to make and all ingredients were added to a crockpot. Before I share the recipe, here are past Buffalo Chicken recipes I have made that you may enjoy as well: Buffalo Chicken Calzones Buffalo Shredded Chicken Ranch Bombs Buffalo Chicken Sliders Buffalo Chicken Macaroni and Cheese Now, to the recipe. I always try and make the recipes my own as well as add healthier alternatives if, and when, possible. Recipe inspiration - Iowa Girl Eats . We used chicken breast in the crockpot instead of canned chicken, 1/3 less fat cream cheese, lite cheddar cheese instead of Colby Jack cheese, half ranch seasoning mix & half lite ranch dressing, as well as Buffalo Sauce with Avocado Oil from Primal Kitchen.  Ingredients: 2 large boneless, skinless chicken breasts 8oz 1/3 less fat cream cheese 4oz cheese (we used lite Colby jack, you can use any kind you pref
