Ground Beef Asian Lettuce Wraps

Although Instagram voted "no" for this to be a food blog recipe and I only took one photo, I decided to share anyway because these Ground Beef Asian Lettuce Wraps were so delicious. The original recipe that I used is from The Cookie Rookie for PF Changs Lettuce Wraps . I did change a few things including ground beef in place of chicken, removed the sriracha, used onion powder instead of diced onion, regular lettuce in place of butter lettuce, garlic powder instead of minced garlic, ground ginger in place of grated ginger, and no water chestnuts.  Ingredients: 1/4 cup hoisin sauce 1/4 cup low sodium soy sauce 1 tbsp rice wine vinegar 1 tsp cornstarch 2 tsp sesame oil 1 pound ground beef (we have been using 93/7) 2 tbsp onion powder 2 tsp garlic powder 1 tsp ground ginger green onions, to top 1 head of lettuce for serving Directions: Whisk together the hoisin sauce, soy sauce, rice wine vinegar and cornstarch. Set aside. In a large skillet over medium heat, add the sesame oil.

Book Review and Summary - Prince Harry - "Spare"

I may be one of the few, but I was intrigued by Prince Harrys' story, which prompted me to pick up his book "Spare." I have to say, as I first started reading, I couldn't put it down, I think I read 50+ pages the first day. I was aware of Prince Harry but knew very little about his life. I remember negative things in the news, all of the negative stories of him. He sounded to me like the "troubled" brother, and, unfortunately, he and everyone else believed he was. I also now understand the meaning behind the book title. The name "Spare" is a name that is described as the one that isn't important. Think of a spare tire, you are kind of pushed to the side until you are needed. As Prince Harry said, his brother was the "Heir" and he was the "Spare" and it was very unfortunate events throughout  the book that describe how and why he felt like this. Easy Mozzarella Chicken Recipe

I can't believe Christmas is in TWO DAYS!! I wanted to share this recipe before Christmas in case you are looking for an easy recipe to make before Christmas (or even on Christmas) and anytime in between. It was surprisingly tasty and the original recipe was pulled from Southern Living . This recipe is as good as it looks. I tend to burn chicken so the best approach I can suggest is heating oil on high and then lowering it down to medium. Keep an eye on the bottom of the chicken. If it is starting to burn quickly, lower the heat or remove the pan from the heat and let the heat lower before adding the pan back. Keep it on medium or a lower heat so that it cooks the chicken evenly.  I used healthier ingredients for this recipe including wheat panko breadcrumbs, olive oil, wheat flour and unsalted butter. I never add salt to any of our recipes because Kevin was told by his doctor to use less salt/sodium. I try to replace ingredients with healthier ones when and where I can. We served

My cousin and I were spending some time together a few days ago and she asked about Jace and how he was doing in school. After a few minutes, she suggested that I blog about it. Initially, I wasn't too keen on the idea, but after doing some research, I realized that parenting a middle schooler can be tough for a lot of parents (I got lucky and he is probably one of the easiest ones) at times so I decided to write down what I do to make our days better. Having a middle schooler is so different than having a child in elementary, to me. Here are 10 things that I/we have done that has really made our days easier and better together.  1. Be consistent - every morning I ask my son how he slept and when he comes home, I ask him how his day was. When we eat together as a family (2-3X per week), we each go around the table discussing our highlight of the day.
