Fried Chicken Sandwiches

Hi. I just have to vent for a minute because it has been a very stressful two weeks and the only way to truly express myself is through blogging and writing. Two weeks ago yesterday our owner's home burned completely to the ground. There is one wall left standing and the horse stalls. I spent four hours by the front of our gate watching their house and property burn. Luckily our property down the street did not get affected by it all. The planes and helicopters stopped the fire with retardant and it stopped right above our home. When we were able to go back into our home, the power was out because PG&E had turned off power to the owners home for safety reasons, not realizing there was another home that needed power. We were without power for four hours so it was an extremely long day. Of course I am SO grateful that our house did not burn down and it was devastating for our owners and friends.  The next weekend, our water went out. We have well water and I think it was because

Easy Indoor Smores

When my sister and nieces and nephew were here a month ago, we made these delicious indoor s'mores. We were going to do outdoor with our firepit but decided it would take too much time. Doing them indoors using a broiler was SO easy and they turned out so tasty. Ingredients: Marshmallows Graham Crackers Chocolate Pieces Directions: Preheat the oven broiler. Add a piece of parchment paper to a baking sheet. Spray with PAM spray. Break the graham crackers in half and lay one graham cracker at the bottom, top with one piece of chocolate, one marshmallow and top with another graham cracker. Do this however many times you would like.  Broil the s'mores until the tops are brown, keep a close eye on them so they don't burn as they will burn very quickly, we broiled ours for about 90 seconds.  Kid approved!

Easy Chicken Thigh Recipe

When you realize that you made this recipe almost a month ago and just now getting to it.... Originally from Delish , this is a Keto Chicken Thighs Recipe and is full of deliciousness. I did not add bacon, we used boneless chicken thighs instead of bone-in, we eliminated salt, we didn't use mushrooms, used onion powder in place of onions, garlic powder instead of garlic, mozzarella cheese instead of parmesan cheese, and butter + milk instead of heavy cream. Ingredients: 6 boneless, skinless, chicken thighs Pepper 1 tbsp onion powder 3/4 cup low sodium chicken broth 1/3 cup unsalted butter 2/3 cup fat free milk 1/3 cup reduced fat mozzarella cheese 1 tbsp Lemon juice 1 tsp Basil Directions: Season chicken with pepper. In a large skillet over medium-high, use cooking spray and spray the skillet and then add chicken. Cook until golden and seared, about 5 minutes and then flip and cook for another 5 minutes. Homemade Hamburger Helper

Happy weekend!  This week has felt like such a long week for some reason and, like always, I'm fairly behind on blog posts. Hopefully I can share one or two with you this weekend. I'm still on Noom and have seen some major changes in my weight and health since I started in April. The great thing about Noom is that you don't have to stop eating your favorite foods. I always make homemade dinners with healthier choices. This Homemade Hamburger Recipe is no different. Complement this hamburger helper with a side of garlic bread, salad, and a glass of wine. Ingredients: 1 pound ground beef  1 tbsp cornstarch 1 tbsp paprika 1 1/2 tsp garlic powder 1 1/2 tsp onion powder 1 tsp splenda Black pepper 2 cups hot water 1 1/2 cups fat free milk 2 cups macaroni noodles 2 cups reduced fat cheddar cheese (or you can do a combination like we did) Directions: Heat a large skillet over medium/high heat. Spray with cooking spray and add the ground beef, breaking it up and stirring about 5-7 m

Shredded BBQ Chicken Sliders

Happy Sunday! I hope everyone is staying safe with Hurricane Hilary. I am fairly certain we heard thunder last night but we are seeing blue skies today :)  Earlier this week I made these Shredded BBQ Chicken Sliders. They were SO easy to make. I combined everything in the crockpot to make it a super easy recipe. Paid with baked beans, potato salad, regular salad, or corn-on-the-cob.  Ingredients: 1/4 cup unsalted butter 2 tbsp garlic powder 2 tsp The Social Distancer by Pinch Spice Market (now called Buffy's Slayer Helper ) 3 chicken breasts, boneless skinless 1/2 tsp paprika 1 tsp Worcestershire sauce 1 cup No Sugar Added, Lakanto BBQ Sauce 2 tbsp olive oil 1 tbsp onion powder 1 package Hawaiian rolls Directions: In a large crockpot, add chicken breasts to the bottom. Cover with garlic powder and unsalted butter (cut into pieces).  Add the Social Distancer, Paprika, and Worcestershire.  Top with bbq sauce, olive oil, and onion powder. Hibachi Chicken Fried Rice

One final Sunday recipe - Hibachi Chicken Fried Rice. This was an amazing Fried Rice recipe . We added chicken, eliminated green onion, used less olive oil and used garlic powder in place of garlic. If you are looking for a fairly easy meal that is delicious, this is the one for you!  Ingredients: Boneless, skinless chicken breast, cut into pieces 2 large eggs, beaten 2 tbsp olive oil 1 tbsp garlic powder 2 cups cooked white rice 3 tbsp organic soy sauce Directions: Heat a wok or pan over medium-high heat. Add 1 tbsp olive oil. Add chicken pieces and stir fry 5-7 minutes or until cooked and no longer pink. Move to a plate.  Add 1 tbsp olive oil and add eggs. Cook and stir eggs until cooked through, 1-2 minutes (or less).  Add chicken back in as well as garlic powder.  Mix in cooked rice and cook until 1-2 more minutes. Add soy sauce until rice mixture is evenly coated, about 3 minutes. Enjoy!

Easy Healthy Pancake Recipe

If you are looking for a super simple, healthy pancake recipe, this is it! With only four ingredients, it can't be easier! This recipe is from Delish . The only thing I changed was using 1 tsp lime juice in place of lemon zest. Turned out delish (no pun intended)! Ingredients: 1/2 cup almond flour 4oz cream cheese (we used whipped) 4 eggs 1 tsp lime juice Directions: In a medium bowl, mix all ingredients together until smooth. Let sit for 2 minutes. In a skillet over medium heat, spray with PAM or cooking spray and pour in about 1/4 cup of the batter and cook about 2 minutes. Flip and cook for 2 more minutes. The first few took a little longer to cook so if you can, let the skillet sit over the heat for 30-60 seconds before adding the batter. Serve with bacon and sausage.
