Easy Chicken Thigh Recipe

When you realize that you made this recipe almost a month ago and just now getting to it.... Originally from Delish , this is a Keto Chicken Thighs Recipe and is full of deliciousness. I did not add bacon, we used boneless chicken thighs instead of bone-in, we eliminated salt, we didn't use mushrooms, used onion powder in place of onions, garlic powder instead of garlic, mozzarella cheese instead of parmesan cheese, and butter + milk instead of heavy cream. Ingredients: 6 boneless, skinless, chicken thighs Pepper 1 tbsp onion powder 3/4 cup low sodium chicken broth 1/3 cup unsalted butter 2/3 cup fat free milk 1/3 cup reduced fat mozzarella cheese 1 tbsp Lemon juice 1 tsp Basil Directions: Season chicken with pepper. In a large skillet over medium-high, use cooking spray and spray the skillet and then add chicken. Cook until golden and seared, about 5 minutes and then flip and cook for another 5 minutes. Happy weekend!  This week has felt like such a long week for some reason and, like always, I'm fairly behind on blog posts. Hopefully I can share one or two with you this weekend. I'm still on Noom and have seen some major changes in my weight and health since I started in April. The great thing about Noom is that you don't have to stop eating your favorite foods. I always make homemade dinners with healthier choices. This Homemade Hamburger Recipe is no different. Complement this hamburger helper with a side of garlic bread, salad, and a glass of wine. Ingredients: 1 pound ground beef  1 tbsp cornstarch 1 tbsp paprika 1 1/2 tsp garlic powder 1 1/2 tsp onion powder 1 tsp splenda Black pepper 2 cups hot water 1 1/2 cups fat free milk 2 cups macaroni noodles 2 cups reduced fat cheddar cheese (or you can do a combination like we did) Directions: Heat a large skillet over medium/high heat. Shredded BBQ Chicken Sliders

Happy Sunday! I hope everyone is staying safe with Hurricane Hilary. I am fairly certain we heard thunder last night but we are seeing blue skies today :)  Earlier this week I made these Shredded BBQ Chicken Sliders. They were SO easy to make. I combined everything in the crockpot to make it a super easy recipe. Paid with baked beans, potato salad, regular salad, or corn-on-the-cob.  Ingredients: 1/4 cup unsalted butter 2 tbsp garlic powder 2 tsp The Social Distancer by Pinch Spice Market (now called Buffy's Slayer Helper ) 3 chicken breasts, boneless skinless 1/2 tsp paprika 1 tsp Worcestershire sauce 1 cup No Sugar Added, Lakanto BBQ Sauce 2 tbsp olive oil 1 tbsp onion powder 1 package Hawaiian rolls Directions: In a large crockpot, add chicken breasts to the bottom. Cover with garlic powder and unsalted butter (cut into pieces).  Add the Social Distancer, Paprika, and Worcestershire.  Top with bbq sauce, olive oil, and onion powder. Hibachi Chicken Fried Rice

One final Sunday recipe - Hibachi Chicken Fried Rice. This was an amazing Fried Rice recipe . We added chicken, eliminated green onion, used less olive oil and used garlic powder in place of garlic. If you are looking for a fairly easy meal that is delicious, this is the one for you!  Ingredients: Boneless, skinless chicken breast, cut into pieces 2 large eggs, beaten 2 tbsp olive oil 1 tbsp garlic powder 2 cups cooked white rice 3 tbsp organic soy sauce Directions: Heat a wok or pan over medium-high heat. Add 1 tbsp olive oil. Add chicken pieces and stir fry 5-7 minutes or until cooked and no longer pink. Move to a plate.  Add 1 tbsp olive oil and add eggs. Cook and stir eggs until cooked through, 1-2 minutes (or less).  Add chicken back in as well as garlic powder.  Mix in cooked rice and cook until 1-2 more minutes. Add soy sauce until rice mixture is evenly coated, about 3 minutes. Enjoy!

Easy Healthy Pancake Recipe

If you are looking for a super simple, healthy pancake recipe, this is it! With only four ingredients, it can't be easier! This recipe is from Delish . The only thing I changed was using 1 tsp lime juice in place of lemon zest. Turned out delish (no pun intended)! Ingredients: 1/2 cup almond flour 4oz cream cheese (we used whipped) 4 eggs 1 tsp lime juice Directions: In a medium bowl, mix all ingredients together until smooth. Let sit for 2 minutes. In a skillet over medium heat, spray with PAM or cooking spray and pour in about 1/4 cup of the batter and cook about 2 minutes. Flip and cook for 2 more minutes. The first few took a little longer to cook so if you can, let the skillet sit over the heat for 30-60 seconds before adding the batter. Serve with bacon and sausage.

Simple and Flavorful Pepper Chicken

Good morning and happy Sunday! My goal today is to share three recipes with you so I can be all caught up before my sister and family comes into town on Wednesday. Today's recipe is Pepper Chicken. The original recipe from Eat Well 101 is a Pepper Chicken Stir Fry recipe. We eliminated the bell peppers, used garlic powder instead of garlic cloves, and didn't use Sriracha and turned it into just  a chicken recipe. If you are looking for a chicken recipe that is to DIE FOR, this is it. I will just leave this recipe here.... Ingredients: Trader Joe's Organic Garlic Naan Crackers (this adds a nice garlic flavor) 2 large eggs Black Pepper Boneless skinless chicken breasts, sliced thin 1/2 cup unsalted butter, cut into pieces Directions: Preheat oven to 375 degrees. Place cracker crumbs and pepper in one bowl and eggs in another bowl. Dip chicken in egg mixture and then crumb mixture to coat. Arrange chicken on a baking dish.  Scatter butter around chicken.  Bake the chicken for 10-12 minutes. While cooking, preheat the Air Fryer on 400 degrees. Transfer the chicken from the oven to the Air Fryer and cook for an additional 10 minutes.  Serve with broccoli, rice and BBQ sauce. Jace added Alfredo sauce and pasta with his chicken.  Enjoy!
