California Breaded Chicken

I am finally caught up on my blogs! It has taken so long but I'm so happy to finally be caught up. That means that moving forward, I will be posting (hopefully) closer to when I actually make them :) This recipe we made last week and it's called California Chicken and it is a Noom recipe.  We used lime juice instead of lemon peel and whole wheat breadcrumbs instead of regular. Honestly, I don't know what makes this or why it's called a California Breaded Chicken. Based off of the ingredients, they are healthier and unique to regular chicken tenders. And although I still use the Noom app, I'm no longer paying for Noom. This was a recipe that I was able to pull up through the app using the paid Noom service. I'm always looking for healthier options so I'm glad I have this so I can make it again in the future. Applebee's Chicken Won Ton Tacos

Happy Tuesday! I went and visited my cousin yesterday and spent the entire day with her so I'm literally so confused on what day it is. It was much needed to spend time with her though - we did a 1 hour 40 minute hike, had lunch together, went to Goodwill, and got pedicures! It was perfect and I wish every day was like that. Today, back to the grind. I worked 8 hours and wanted to finish the evening with a blog.  I actually made this as one of my first recipes when I started Noom on April 1st. This recipe is for Applebees Chicken WonTon Tacos. They were SO good! Healthy Banana Split

I first have to say, how exciting is it to see the Denver Nuggets win the championship? I am a HUGE Denver Broncos fan and I saw how good the Nuggets were a few years ago (they beat my Jazz) so I have been rooting for them this year. I'm so happy for them! Anyways, on to the recipe. This is another recipe from Noom (they call it Whip-It-Good Banana Split) and it's for a healthier banana split pudding recipe. Super easy to make. I added some chocolate chips on top but it tastes just like a banana split or banana cheesecake. Huge win for our house! I also love the fact that this is very low calorie and I used fat free or sugar free options when and where I could. Frozen Raspberry Dessert

Named, "Frozen Raspberry Fool" by Noom, this recipe is straight perfection. With only five ingredients, this smoothie/ice cream recipe is super easy to make. This recipe will be one that I will make over and over! And it's a perfect summer recipe. If you love fruit and smoothies, this is the dessert for you.  Ingredients: 1 12oz package of frozen unsweetened raspberries 1/4 cup powered sugar 1/2 cup heavy cream 1/2 tsp vanilla extract Fresh raspberries for garnish Directions: In a blender, combine the frozen raspberries until finely shaved, scraping the sides occasionally. Add the sugar, cream and vanilla and process until smooth, or just blended. Refrigerate for 15 minutes and top with fresh raspberries.  

Crockpot beef tips

Happy Sunday! Although it's another day of work, I thought I would take a quick break and catch up on some blogs. Next week I have such a busy schedule and will be missing two days of work so I'm trying to make up as much as I can this weekend.  Anyways, I made this recipe a few weeks ago and it was too delicious to not share. This recipe is from Weight Watchers and is a beef tips recipe. I combined ours with rice to make a delicious meal (it may not look great in the photos but I only share recipes that we liked!) The original recipe for this one can be found HERE .  Ingredients: 1 1/2 pounds beef sirloin, cut into pieces 1 tbsp onion powder 1 10oz can cream of mushroom soup 1 tbsp worcestershire sauce 1/4 cup water 1/4 cup fat free sour cream Black pepper to taste Directions: In a saucepan, brown the beef tips in vegetable oil or PAM cooking spray. Move beef tips to the slow cooker. Add onion powder, cream of mushroom soup, water, and worcestershire sauce. Stir to mix. Cook o

Healthy Kung Pao Chicken Recipe

Happy Saturday! I am so excited and thankful for weekends. Although I have to work today (busy week next week!) I am still so grateful for days where I don't feel rushed or have to live by a schedule. Jace got out of school for the summer yesterday - I can't believe he will be in 7th grade next year!  Anyways, earlier this week I made this delicious, healthy, Kung Pao Chicken. The original recipe can be found HERE . We used ground ginger instead of ginger and garlic powder instead of garlic. We did not use celery ribs, red pepper, green onions, or sriracha. Ingredients: 1 1/2 pounds boneless, skinless chicken breasts, chopped 4 tsp sesame oil 1 tbsp garlic powder 1 tsp ground ginger 2 tbsp low sodium soy sauce 1 tbsp honey Black pepper, to taste Peanuts, to taste Directions: Add 2 tsp sesame oil in the pan. Add the chicken, garlic powder and ground ginger and cook for 5-7 minutes until cooked through and remove from heat. In a bowl, stir together the soy sauce, honey and pepper

Creamy Applesauce Dream

This apple dessert recipe is from Noom and I made it exactly like the recipe called for (except I added one scoop of ice cream instead of greek yogurt). So delicious and would definitely make again!  Ingredients: 4 medium apples, peeled, cored and quartered 1/4 cup orange juice 2 tsp vanilla extract 2 tsp cinnamon 1/4 cup greek yogurt (optional, or splurge like I did and do a scoop of ice cream) Directions: In a large pot, combine the apples, orange juice, vanilla and cinnamon. Cover and simmer for 30 minutes or until the apples are tender, stirring occasionally. Mash the apples with a fork or potato masher until smooth. Top each with yogurt or ice cream.  You can make this as a snack, dessert, or in-between meals. If you keep track of your calories in Noom, the apples and yogurt are both considered Green, the Orange Juice is a Yellow, and the toppings are considered Orange so it truly is the definition of balance by Noom's terminology.
