I am officially in my 7th year of entering and winning giveaways, sweepstakes and freebies. I can't believe that I have been entering for 7 years! It has literally become a second job to me and just natural now to just enter giveaways in my free time. I typically win Instagram giveaways. Healthy Beef and Broccoli with White Rice

The The night I got home from Utah called for a delicious homemade Healthy Beef and Broccoli with White Rice meal. I love cooking and missed it so much while I was gone. It's also been nice to eat healthier since I've been home this week. This recipe was pretty easy to make and was another one from Davita that can be found HERE . I did not use garlic cloves, a tomato or peanut oil. I replaced the garlic cloves with garlic powder and used sesame oil instead of peanut oil. Ingredients: 2 tbsp Wine Smoked Garlic from The Salt Smith 8oz sirloin beef, uncooked 12oz frozen broccoli 2 tbsp sesame oil 1/4 cup low sodium chicken broth 1 tbsp cornstarch 2 tbsp low sodium soy sauce 2 cups white rice Directions: The original recipe calls for thawing out the frozen broccoli in the microwave but I ended up using a wok for both the beef and broccoli. I used the sesame oil and garlic and let it heat up for about a minute. I added the broccoli and cooked about 3-5 minutes until soft. I removed

Slow Cooker Pulled BBQ Chicken

Two nights ago I made Slow Cooker Pulled BBQ Chicken for dinner and I was amazed at how delicious this was. The original recipe was from Diabetes Food Hub HERE . Instead of whole chicken, I used three boneless, skinless, chicken breasts. I also used a No Sugar Added BBQ Sauce and didn't use the cabbage or lettuce. I added this chicken on an English muffin and it was delish.  Ingredients: 1 tbsp Parika 1 tsp Chili Powder 1 tsp pepper 1 tsp Wine Smoked Garlic from The Salt Smith 1 tbsp onion powder 1 cup no sugar bbq sauce Directions: Combine paprika, chili powder, pepper, wine smoked garlic and onion powder in a bowl. Add chicken pieces and toss to coat chicken.  Add the chicken to a slow cooker.  Pour the one cup of BBQ sauce on top of the chicken.  Cook on high for 3-4 hours. Shred chicken. Eat just like that or add to an English Muffin or wheat bread. Enjoy!

Healthy Panko Chicken Tenders

After making these healthy panko chicken tenders earlier this week, this will definitely be added to our dinner rotation. Jace who is 11 loved it and Kevin and I both loved this recipe. These tenders are SO easy to make. The chicken was perfect and juicy and not tough or overcooked.  This recipe can be found HERE and is not from Davita for once. Super healthy, delicious, juicy and tender! Enjoy with BBQ sauce.  On a side note, my brother got me an aromatic salt set from his friends company - Salt Smith - and I have used the Wine Smoked Garlic in literally almost every recipe this week. Try them out HERE !  Ingredients : 2 large boneless skinless chicken breasts, 2/3 cup breadcrumbs, 1 egg, 1/4 tsp pepper, 1/2 tsp Wine Smoked Garlic, 1/2 tsp salt free garlic and herb Directions : whisk egg. Trim fat on chicken and cut into strips. Preheat oven to 375 degrees. Mix breadcrumbs, garlic salt, pepper, and garlic and herb seasoning in a bag. Place chicken in egg wash and then breadcrumb mixt

Last night we decided to go for a sweeter meal and made Belgian Waffles for dinner. I actually misread the directions so mine are a little bit different but they still turned out perfect. This recipe is from Davita and can be found HERE . We used regular flour instead of cake flour and regular butter instead of unsalted butter. We replaced the granulated sugar with monkfruit. Ingredients: 2 large eggs 2 cups flour 3/4 tsp baking soda 3/4 cup sour cream 3/4 cup milk 2 tsp vanilla extract 4 tbsp butter 2 tbsp monkfruit powdered sugar, raspberries and sugar-free syrup to go on top Directions: Heat a waffle iron. In a mixing bowl, mix together the flour and baking soda and set aside. Whisk together the eggs, sour cream, milk and vanilla. Melt the butter and add it to the egg mixture. Add the monkfruit to the egg mixture. Whisk the sour cream mixture into the flour mixture until just combined. Do not overmix. Spray the waffle iron with PAM or cooking spray. Slow cooker Rotisserie Chicken Chili

A few nights ago I decided to make this Chicken Chili but using Rotisserie Chicken and I had to brag a little and say that this was probably the best chili I have ever made. It has chili powder so it contains a little kick but it's not so hot that it's unbearable. This recipe was from the one and only Davita. The original recipe used some stuff that we didnt - celery, garlic cloves, green pepper, chicken breast, onion, white rice and mexican oregano. The original recipe can be found HERE .  Ingredients - 1 tbsp vegetable oil, 1 tbsp onion powder, 1 tbsp garlic powder, 1 cup carrots, 1 cup Rotisserie chicken, 14oz chicken broth, 1 cup diced tomatoes, 1 cup kidney beans, 3/4 cup salsa, 3 tbsp chili powder, 1 tsp oregano, 1/2 cup shredded cheddar cheese, 1/2 cup sour cream Directions - Add everything except the rotisserie chicken, sour cream and cheddar cheese in a crockpot. Set on high for 3-4 hours. Add the rotisserie chicken and cook for 45 minutes more. Top with cheese, sour c

Before I tell you guys all about this amazing recipe, I just need to vent. That's what a blog is for, right? Well, I've had a rough start to 2022. Although the final week of December was amazing because Jace and i went out to Utah and got to spend time with my amazing family and my best friend, there has been so much that has happened since.  We were supposed to fly home on December 31st but our flight was completely cancelled with no scheduling options. Kevin was picking us up so I called him at 2am and he called me back at 5am. From 1-3am I was trying to get more flight information and trying to get ahold of someone at Delta. It ended up being a 4 hour wait so I went to bed. We ended up catching a flight for the next day, different airport but around the same time. We land on the 1st and I realized I don't have my backpack- with my license, prescriptions, debit card, credit cards...and I still to this day have no idea where I left it. My card hasn't been used yet but
