Chicken Enchilada Tacos Recipe

For those who don't know, I have a small glitter tumbler business that I started in February of this year. I received a custom order of eight tumblers that I am going to customize. I was supposed to receive 12 tumblers last night from Amazon and my order is running late :( I was going to spend all day making tumblers but, instead, you guys get a recipe :)  This recipe is actually kind of funny because my plan last night was to make shredded chicken enchiladas (and since today is Mexican Independence Day and I'm partially Hispanic, this recipe totally makes sense) but it turned into shredded chicken tacos. Since Kevin, Jace and I are really trying to eat better, a lot of our recipes are from Davita and this recipe was no different. This is a crockpot recipe and it contains a homemade enchilada sauce. Garlic Butter Steak Strips

I'm a little behind on writing a blog post but I have been busy. Jace and I went with some new friends this afternoon to the Paso football game and we loved it. It was in the 90's outside and perfect. And I didn't have to cook tonight because we ordered Domino's :) I know, I know, not the best but hey, it was a day I didn't have to cook so I was fine with it! Also, I'm currently watching the most competitive football game in Utah - Utah Utes and BYU - and I have been looking forward to this game for the past week. Even though I no longer live in Utah, it is still fun to watch! Pizza and football is the perfect Saturday night. We made this recipe a few nights ago and I got compliments all around. Ground Turkey Chili Mac

Hello and happy Friday! Although I may not be working at the moment, I still have a very busy week life and healthy grocery shopping is included in that. A few days ago I had purchased ground turkey and we decided to make this Firehouse Chili Mac. The recipe is from Davita so it is a kidney friendly recipe. The great thing about Davita is you can type in the search box on the website what kind of recipe you are looking for. In this recipe we used ground turkey instead of ground beef. I used onion powder instead of onion, no bell pepper, monkfruit instead of sugar, garlic powder instead of garlic, and tomato sauce instead of stewed tomatoes with jalapeno peppers.  Ingredients: 1 pound ground turkey 1 tbsp onion powder 3/4 cup water 1 tbsp chili powder 1 tsp monkfruit 1 tsp ground cumin 1 tbsp garlic powder 1 cup tomato sauce 2 cups spiral macaroni Directions: In a crockpot, add the ground turkey (uncooked), onion powder, water, chili powder, monkfruit, cumin, garlic powder, and tomato

Chicken Pad Thai

Chicken Pad Thai has a very unique flavor. It's not spicy, but not sweet. It combines an array of flavors such as Pad Thai sauce, an egg, green onions, lime juice, and onion powder. It's super easy to make and it is a recipe that is kidney-friendly (it is from kidney.org) and the original recipe can be found HERE . We did not use a chili pepper or cilantro and garlic powder instead of garlic. If you If you like this recipe, let me know in the comments below! Also, I am loving rice noodles lately! They are so different but so good! Anyways, here is the recipe! Ingredients: 1 pound rice noodles 1/4 cup vegetable oil 2 large chicken breasts (boneless, skinless), cubed 1 tbsp garlic powder 1 green onion, sliced 1 egg 2/3 cup Pad Thai Sauce 1 tsp lime juice Directions: Soak rice noodles for 40 minutes.  Stir fry chicken for 6-8 minutes in vegetable oil. Add garlic powder and green onions. Add egg and stir. Add noodles and Pad Thai Sauce.  Add Lime Juice. Stir until warm. Serve with

Baked Cream Cheese Cinnamon Roll-Ups

Last night Kevin and I were craving something sweet and we found this recipe for Baked Cream Cheese Cinnamon Roll-Ups. All it took was one bite and I was in heaven. The recipe can be found HERE . We used large tortillas instead of bread and it worked perfectly. We also used monkfruit instead of sugar.  Ingredients: 4 large tortillas 4 oz cream cheese 3 tbsp powdered sugar 1/2 cup monkfruit 1 tsp cinnamon 1/2 cup melted butter Directions: Preheat oven to 350 degrees. Combine the cream cheese and powdered sugar until smooth in a bowl. In another bowl, add the monkfruit and cinnamon until well combined. Melt the butter and add in a bigger bowl.  Spread the cream cheese mixture to one side of the tortilla.  Roll up, dip in the butter and then the sugar and cinnamon mixture. Place on a baking sheet. Bake for 20 minutes until lightly browned. Try not to eat them all in one sitting ;) 

Chipotle Shrimp Tacos

You guys, I hate seafood. I hate shrimp. I hate the smell, I hate the feel of it and I let Kevin know that I made some sacrifices for him when I made these Chipotle Shrimp Tacos ;) He didn't want the Pineapple Salsa from the original recipe so the one that we made was super easy to make. Since Kevin is on a lower-sodium diet, I ordered the Southwest Chipotle Mrs. Dash seasoning from Amazon.  Ingredients: 1/4 cup vegetable oil 2 tbsp garlic powder 1.5 tbsp Southwest Chipotle Mrs. Dash 15 medium-sized shrimp, no tails, peeled, deveined and thawed 3 corn tortillas  Additional items: Cheese, hot sauce, lettuce and any other toppings. Directions: In a medium bowl, combine the vegetable oil, garlic powder, and Southwest seasoning. Toss shrimp into the mixture, coating shrimp well. Keep in the fridge for a few hours.  Heat skillet over medium heat. Add shrimp to pan and cook four minutes - turning shrimp over after two minutes.  Assemble tacos using cheese, hot sauce, lettuce, and shrimp

Chicken Teriyaki Bowls

A few nights ago I made the most delicious Chicken Teriyaki Bowls. They were so good in fact that Jace said, "This is the best dinner you have ever made!" and he has had a lot of home-cooked meals! This Teriyaki Chicken bowl had stir-fried broccoli and rice noodles. The original recipe is from Davita and can be found HERE . We replaced the splenda with monkfruit (I love love love monkfruit) and we substituted a clove of garlic for garlic powder.  Ingredients: 1 tbsp cornstarch 1 tbsp water 1/2 cup monkfruit 1/2 cup soy sauce 1/4 cup apple cider vinegar 1 tbsp garlic powder 1/2 tsp ground ginger 1/4 tsp pepper 4 large boneless chicken breasts Directions: In a saucepan over low heat, combine the cornstarch, water, monkfruit, soy sauce, apple cider vinegar, garlic powder, ground ginger and pepper. Stir and turn heat up to medium and let the sauce thicken and bubble.  Preheat oven to 425 degrees. Place chicken in a baking dish and brush with teriyaki sauce. Turn over and brush ag
