Ground Beef Lettuce Wraps

Holy Moly. If you want to have the most amazing lettuce wraps, you will want to try these! I could not stop eating them! I used the recipe from the back of the lettuce wraps seasoning and it worked out perfect. The only difference is I didn't use chicken but ground beef instead. And we used lean ground beef so it's kidney-friendly.  Ingredients: 1 package Lettuce Wrap Seasoning 1/4 cup water 1 tbsp soy sauce 1 1/2 tsp Monkfruit 1 pound ground beef Water chestnuts Sliced green onions 1 head iceberg lettuce Directions: In a bowl, combine seasoning, water, soy sauce, and monkfruit.  Let sit in the refrigerator for 20 minutes.  In a skillet, combine the ground beef with the seasoning mixture. Cook mixture on high for 1 minute and then turn down to medium until cooked all the way through, about 5-7 minutes. Cut a head of iceberg lettuce and tear off lettuce to use as a bowl or cup. Slice water chestnuts and green onions. Pour the meat mixture in a lettuce cup and then top with water

Slow Cooker Turkey and Ground Beef Chili

This weekend has been full of NFL pre-season football! Yesterday afternoon we watched my Denver Broncos and this morning is the Indianapolis Colts for Kevin. As for the Broncos, they looked good! I was worried about keeping Drew Lock but I thought he looked great yesterday. I know it's pre-season but last year we did terrible so hopefully this is signs of things to come :)  For dinner last night we were going to make chicken but we had purchased ground turkey and ground beef from Trader Joe's earlier this week so we decided to make a Turkey and Ground Beef Chili in the crockpot. The original recipe can be found HERE .  This is a kidney-friendly chili and we adapted/added some things based on our preferences: We used one pound of ground turkey instead of two, added black beans, used onion powder instead of onion, removed the green bell pepper, we didn't use the boiling water or rice, and we added beef broth. Homemade Pancakes

I'm so proud of the food changes that Kevin and I have made the past few days. I know...it's ONLY been a few days...but it's still something that we both need and I'm excited to continue this journey. One of our favorite meals is breakfast for dinner - pancakes or french toast, eggs, grits, sausage, and bacon. Last night we decided to do a healthier pancake recipe, low sodium bacon, eggs, and grits with PAM spray instead of butter. This pancake recipe can be found HERE . I followed the recipe to a "T" and I literally had four pancakes. They were SO good. We also added a little bit of Cinnamon and Nutmeg in with the wet ingredients and I think that's what did it for me. If you make this, please let me know below and what your thoughts are! Homemade Spaghetti Sauce

Last night I decided to make Spaghetti with a homemade Spaghetti Sauce to help with us eating better. Thanks to my Nana, I also have been using Linguine noodles instead of Spaghetti Noodles - game. changer. The original spaghetti sauce recipe was actually a slow cooker recipe but I didn't realize that until it was too late. So I just added everything to a pan on the stove and it worked out perfectly! This spaghetti sauce recipe was easy to make and it does contain ground beef. The tomatoes had green chilis so it had a little kick to it. It was delicious! Garlic Onion Popcorn

I have been so behind on blog posts this past week because my sisters, nieces, and nephew came into town! I spent four days with them which has been amazing! And I did a huge grocery shopping haul while I was visiting. Moving forward, most of the recipes will be healthier. I know I say that and it's not always true but Kevin and I have decided to start eating way healthier so hopefully this will be long-term. This Garlic Onion Popcorn is the perfect snack and my boys LOVED it. It's super easy to make too! The original recipe can be found HERE.  The only difference was the measurements and then I was specific on the type of popcorn that I purchased from Trader Joe's. We also did not use the yeast. Ingredients: 5oz Movie Theater Popcorn, Trader Joe's 1 tbsp garlic powder 1 tbsp onion powder I Can't Believe it's not Butter! Spray Directions: Put popcorn in a large bowl. Spray popcorn with butter spray. Add garlic powder and onion powder. Mix around and enjoy! 

Teriyaki Chicken Recipe

This week has been tough and it's only Thursday. But my sister will be here this weekend and next week I will be spending time with her and my cousin and grandparents so I'm hoping that will change my mood! Last night I made this Teriyaki Chicken recipe and it was so good. We added broccoli and a side of rice. The original recipe that I pulled this from can be found HERE . I used ground ginger instead of fresh ginger and garlic powder instead of fresh garlic. If you make this recipe, let me know in the comments below! Ingredients: 1 large boneless skinless chicken breast, diced into 1 inch cubes. 3 tbsps olive oil 1/4 cup low-sodium soy sauce 1/4 cup water 2 tbsp honey 1 1/2 tbsp light brown sugar 1 tbsp rice vinegar 1/4 tsp sesame oil 2 tsp ground ginger 2 tsp garlic powder 2 tsp cornstarch sesame seeds broccoli white rice Directions: Heat olive oil in a stir fry pan over medium-high heat. Steak and Potato Packets

I think Sunday is going to be our family cooking day. It was so fun to have Kevin and Jace both help me with dinner. Sometimes Jace will help but with Kevin being gone at work all day, Sunday was perfect for all of us to cook together. We made these Steak and Potato Packets in the oven and they were surprisingly good. I'm going to channel my inner Guy Fieri right now - the potatoes and steak were extremely soft, not hard or chewy. The seasonings really made the meal and brought everything together. Recipe inspiration - The Stay at Home Chef . We did not use jalapenos, parsley, rosemary or granulated garlic. We used garlic powder and Basil.  Ingredients: 1.5 pounds cubed sirloin steak (hopefully you can find it cheaper than I did - I paid $20!) 2 pounds red potatoes, cut into bite size pieces 6 tbsp butter 2 tbsp basil 2 tsp salt 2 tsp pepper 2 tsp garlic powder 1 tbsp Worcestershire sauce Directions: Cube the steak and potatoes into bite size pieces.  Boil water in a pot and place
