Broccoli Chicken casserole

I meant to make this blog yesterday but I spent all day making glitter tumblers. For those who don't know, I have been making and selling glitter tumblers since the end of February of this year. I spend a lot of time on them and love doing them. Meatball Sub Recipe

It's been awhile since I have blogged about food and that is because we have been making things that I have either blogged about or it's something like pizza. A few nights ago I made meatball subs and realized I haven't made a blog about meatball subs so here you go! This recipe was actually pretty easy to make and didn't take more than an hour and it was made with simple ingredients.  Ingredients: 1 pound ground beef 1/2 cup bread crumbs 2 tbsp onion powder 1 egg salt pepper 1/2 cup Spaghetti sauce (per sub) 1/4 cup mozzarella cheese (per sub) Italian seasoning Hoagie Rolls Directions: To cook the meatballs, I mixed ground beef, egg, bread crumbs, onion powder, salt and pepper in a bowl. With my hands, I formed them into balls and put them on a tray. I baked them in the oven at 350 degrees for 25 minutes.  With about 6 minutes to spare, I sprayed a hoagie roll with butter and put in the oven with the meatballs to toast. Chili Cheese Nachos

Last night I enlisted 10 year old Jace to help make dinner with me. He loves cooking and wants to make his own cooking YouTube channel. I'm considering doing that. Anyways, he helped me with this Chili Cheese Nachos recipe which was SO good! Jace and I both had seconds! Here is the full recipe and it's super easy too: Ingredients: 2 cans Hormel chili with beans 1 tbsp onion powder 1 tbsp cumin 1 tbsp chili powder salt and pepper to taste ------------- A bag of tortilla chips 1 cup cheddar cheese 1 cup mozzarella cheese ------------- For the topping you can add lettuce, taco sauce, nacho cheese sauce or whatever you would like! Directions: Cook and stir all ingredients in a saucepan over medium-high heat. Bring to a boil, reduce to low and simmer about 5-10 minutes.  Place aluminum foil over a baking sheet and spray with PAM or cooking spray. Lay out the tortilla chips, as many as you would like, across the baking sheet.  Set oven to 350 degrees. Once the chili is done, lay the

Slow Cooker Chicken and Gravy

Chicken and Gravy has been such a comfort food for my family. Not only is it so delicious, but it's so easy to make! In fact, this is my 4th Chicken and Gravy blog post - all different versions! The original recipe for this one can be found HERE and our version is below. Again, I didn't take very many photos and don't let my bad photos fool you. It was amazing with rice! Here are the other three Chicken and Gravy recipes if you want to try something different than this one: Creamy Chicken in the Crockpot Crockpot Creamy Chicken and Rice Recipe Creamy Crockpot Chicken and Rice Ingredients: 2 boneless skinless chicken breasts 1 dry chicken gravy mix packet 2 cans of cream of chicken soup 1 1/2 cups water black pepper Directions: Place chicken in the bottom of a slow cooker. Add all of the other ingredients. Cook on high for four hours. Shred chicken with two forks in crockpot. Cook for 30 minutes more. Serve over rice. Easy, right?

Crispy Chicken Parmesan

OK you guys, I'm a little more prepared in this blog and came up with more than just one photo. I haven't had Chicken Parmesan in so long and we ended up using this recipe  HERE . These are fried AND baked these and they turned out SO good! The full directions are below, enjoy!  Ingredients for the Chicken: 2 chicken breasts, cut horizontally, so 4 total pieces 1 cup buttermilk 1 tsp salt 1/4 tsp cayenne pepper 1/4 tsp garlic powder 1/4 tsp paprika Ingredients for the breaded topping: 1 1/2 cups flour 1 1/2 tsp baking powder 1 tsp salt 3/4 tsp pepper 3/4 tsp garlic powder 3/4 tsp paprika 3 tbsp buttermilk Ingredients for cooking: 3-4 cups vegetable oil Ingredients to top: Mozzarella cheese Spaghetti sauce Oregano Directions: In a bowl, place all of the ingredients for the chicken together and whisk. Add chicken and marinate for 2 hours (or longer if you can). I just left it in the bowl, not covered, in the refrigerator.  In the meantime, start putting together the ingredients f

Crockpot Chuck Roast

Hi guys. It's been awhile since I've written a food blog and I have a good explanation. Everything that I have made lately has either been a blog post already or it's something like breakfast, BBQ, or pizza. I wasn't actually going to write a blog about this chuck roast that I made last night except it ended up being really good and then I realized that I haven't shared this recipe before. Forgive me as I only took ONE photo of my entire meal because I didn't plan on sharing. I didn't even get a photo of the food on my plate because by the time I thought about it, my plate was cleared! Slow Cooker Steak Fajitas

Yesterday, again with it being Cinco de "Mario", I had to make some Mexican food, right? So I made Slow Cooker Steak Fajitas with Sirloin Steak. The original recipe can be found from Taste of Home HERE and we made this our own below.  Ingredients: 1.25 pound Top Sirloin Steak 1 medium red pepper, cut into strips 2 tbsp onion powder .87oz packet of fajita seasoning mix 1/2 cup beef broth 8 tortillas 6 tbsp pico de gallo Directions: Place the steak, red pepper, onion powder, and fajita seasoning mix in the slow cooker.  Pour the beef broth on top and cook, covered, on low about 6-6.5 hours. Remote from slow cooker and let sit about five minutes. Cut into slices, against the grain. Serve in tortillas with pico de gallo, sour cream and cheese if you would like. The meat will be tender so you can also shred it if you would like but I just cut in slices and put in tortillas. Enjoy!
