Air Fryer Pizza Egg Rolls

Image
This Air Fryer Pizza Egg Rolls recipe was like by all three of us! It was so easy to make and even though I made it for dinner, it's also a perfect lunch or snack recipe. The original recipe can be found HERE and there are only three ingredients - egg roll wrappers, string cheese and pepperoni. Just lay an egg roll wrapper down, place 5 pepperoni slices side by side below the center, top with a stick of string cheese, moisten all four edges and fold in towards the middle and tightly around the string cheese. Seal with water and repeat. I have the Emeril Air Fryer so I set the Air Fryer to 360 degrees, placed four at a time in the Air Fryer and cooked for 7 minutes. Serve with spaghetti sauce!

Skillet Chicken and Gravy

I'm hoping to get two recipes done today because life has been flying by and I've been so busy and been putting my blogs to the side :/ For those who don't know, I have started a glitter tumbler business and I absolutely love it. You can view my inventory HERE . It's been keeping me busy and I have about 8-10 tumblers currently lined up.  Over the weekend we took Jace to Dave and Busters in Thousand Oaks and spent the night. Our small trip to Chuck E. Cheese ended up being a full two day trip to Dave and Busters. It was fun though and Jace loved the games!  Jace starts basketball camp tonight that goes for six weeks so we are all looking forward to that. Although his dad played baseball in college, Jace has been stuck on basketball for quite some time.  So, as you can see, super busy. I feel like it's pre-COVID :) Anyways, last week I made this Chicken and Gravy skillet and it was fairly easy to make. Most of the items you probably have on-hand already. If you make

Teriyaki Pulled Pork

If you want your house to smell AMAZING all day, you will definitely want to make this Slow Cooker Teriyaki Pulled Pork. We made sandwiches out of the pulled pork but you can really eat it by itself or you can use hamburger buns, so amazing and delicious! The original recipe can be found HERE and we changed a few things including - using pork butt instead of pork shoulder, used ground ginger instead of fresh ginger, used sherry cooking wine instead of dry sherry and used garlic powder instead of minced garlic. This recipe has a lot of ingredients but is fairly easy to make. If you make it, let me know in the comments below! I would love to hear your feedback.  Ingredients: 3/4 cup soy sauce 1/4 cup chicken broth 1/4 cup pineapple juice 3 tbsp brown sugar 3 tbsp sherry cooking wine 1 tbsp honey 2 tsp garlic powder 1 tsp sesame oil 1 tsp ground ginger 1 tsp red pepper flakes 1/4 cup cold water 3 tsp cornstarch 3 pounds pork butt roast Directions: Combine soy sauce, chicken broth, pineap

Chicken Ranch Macaroni and Cheese

Image
As you may have noticed, I didn't cook a lot this week. I have recipes all ready to go but my guess is I won't be making them until next week so hopefully that means more recipes for you soon! Sorry about the shortage this week :) This Chicken Ranch Macaroni and Cheese was SO good. We had this last night for dinner. I changed a few things including measurements, I used more macaroni shells and less chicken breasts and ranch seasoning than the original recipe HERE . I also replaced the mozzarella cheese with cheddar cheese (I totally thought we had mozzarella cheese but I guess it got eaten). It makes a lot so we had PLENTY of leftovers. If you enjoy this recipe, let me know in the comments below! Ingredients: 2 tbsp olive oil 1 large boneless skinless chicken breast, cut into cubes .25oz dry ranch seasoning 1/4 cup butter 1/4 cup flour 1 1/2 cups milk, warmed 1/4 tsp salt 1 tsp garlic powder .25oz dry ranch seasoning 1/2 cup white cheddar cheese, cut into chunks 1/4 cup cheddar

Creamy Beef and Shells

Oh hey guys! It's been awhile since I've blogged and that was due to Easter and this week has already been a whirlwind. I meant to put this together yesterday but things got busy so hopefully this gets posted and shared today :) Last week Kevin and I had Creamy Beef and Shells and they were SO good! The original recipe can be found HERE and we only changed yellow onion for onion powder. This recipe turned out really good and would definitely make it again! Ingredients: 10 oz large macaroni pasta shells 1 tbsp olive oil 1 pound ground beef 1 tbsp onion powder 2 tsp Italian seasoning 2 tsp chili powder 1 tsp paprika 1 tsp garlic powder 3/4 tsp salt 1/2 tsp pepper 2 tbsp flour 2 cups beef broth 15 oz can of tomato sauce 1/2 cup heavy whipping cream 1 cup cheddar cheese Directions: Boil the pasta 1 minute shy of the package directions (for large macaroni shells, that's about 9 minutes).  Meanwhile, heat olive oil in a very large skillet over medium-high heat. Add the ground be

Four Cheese Chicken Pasta

Kevin and I had such a good night last night. We listened to old school music - O-Town, KC and JoJo etc. and cooked and danced. We made this four cheese pasta and added chicken (you can add any meat if you want or just eat it as-is) and it was delicious. We always adjust the flavor based on preferences so below is what we did. The original recipe can be found HERE but we changed quite a bit. Our full recipe is below.  Ingredients: 1 boneless, skinless chicken breast, diced 1 cup heavy cream 2 tsp dried thyme 1 tbsp garlic powder 1 oz mozzarella cheese, shredded 1/4 tsp pepper 1 oz Parmigiano Reggiano cheese, grated 1/4 lb grated Le Gruyere 1/4 cup shredded Parmesan cheese 1 pound Rotini pasta Directions: In a medium pot, combine cream with thyme, garlic powder and pepper. Bring to a simmer over medium heat, stirring and scraping the bottom of the pan to prevent scorching. Remove from heat and let sit for 5 minutes.  Return to low heat and add grated Gruyere cheese and whisk until melt
