Chicken Alfredo Lasagna Roll Ups

Image
Last night I made these Chicken Alfredo Lasagna Roll Ups for the first time. There were a few steps involved but, overall, it wasn't too complicated of a recipe. These Chicken Alfredo Roll Ups consist of chicken (I used chicken thighs that were cooked and shredded in the crockpot), cheese, lasagna noodles, and some seasonings. This Chicken Alfredo Roll Up recipe is extremely delicious and your family will be wanting more! The original recipe could be found HERE - I added more lasagna noodles, less Ricotta cheese, less salt, more Alfredo Sauce and less Mozzarella and it turned out perfectly :)  Ingredients: 12 lasagna noodles 2 cups chicken thighs, cooked and shredded 1-2 cups chicken broth 15 oz ricotta cheese 1/2 tsp salt 1 tsp Italian Seasoning 1 tsp onion powder 1 tsp garlic powder 15 oz Alfredo Sauce in the jar 1 cup shredded Mozzarella cheese 1 cup shredded Parmesan cheese Directions: In the morning, add 3-4 chicken thighs to a slow cooker with 1-2 cups chicken broth. Cook on

Cast Iron Filet Mignon

Image
This super easy Filet Mignon takes about 20 minutes in the cast iron skillet. The original recipe can be found HERE and we cooked ours until it was well-done but adjust as needed based on your preference.  Ingredients: 2 beef tenderloin fillets salt and pepper to taste 4 tbsp butter 2 tbsp olive oil Directions: Sprinkle fillets with salt and pepper. Melt half of the butter and olive oil in a cast-iron skillet over medium heat. Cook 5-7 minutes per side, add butter on top of the fillets and cook for 1-2 minutes more, or until your level of doneness.  Serve with salad, green beans and rice.

Air Fryer Pizza

Image
If you are looking for the perfect, easy lunch for kiddos, this is it. Jace and I made this a few days ago and it was so easy for him to help. The only thing I would recommend is preheat the Air Fryer beforehand - I had to cook it a little longer because it was still doughy. You can also add sausage as the original recipe calls for that. I also didn't use a whole can of biscuits - I used maybe half. I also only have one child so if you have several kids, you may want to use the whole can.  Ingredients: 1/2 can of Grands Biscuits 1 cup pizza sauce Pepperoni slices to top 4oz mozzarella cheese Directions: Open the package of biscuits and separate each biscuits into two. Roll each biscuit out into a circle.  Top each dough with pizza sauce, pepperoni and then mozzarella cheese.  Spray the Air Fryer basket with cooking spray. Transfer 2-3 of the pizzas to the basket and cook on 400 degrees for 5-7 minutes or until golden brown and dough is cooked through.  Remove from the basket with

Chicken Stir Fry

I have made several different Chicken Stir Fry recipes in the past but this one takes the cake. So much so that we did not have any leftovers. This easy Chicken Stir Fry recipe comes from HERE originally but I formed it to make my own. The changes I made were as follows - I did not add peppers, I used garlic powder instead of minced garlic and ground ginger instead of minced ginger. If you want to view my two other blog posts on Chicken Stir Fry, you can view them here: Chicken and Vegetable Stir-Fry  Chicken Broccoli Stir Fry I hope you enjoy this recipe below! Beef Tips and Gravy

Last night for dinner I made these delicious beef tips and gravy with mashed potatoes and roasted broccoli. I used a partial recipe from HERE and added one can of beef gravy and made some other changes to the recipe below.  Ingredients: 1.5 pound steak sirloin 1 tsp salt 1 tbsp olive oil 3 tbsp butter 1 tbsp onion powder 2 tbsp garlic powder 1/4 cup flour 3 cups beef broth 1 tbsp soy sauce 2 tbsp Worcestershire sauce 1 tsp thyme 1 tbsp basil 1 can beef gravy Directions: Cut the sirloin steak into chunks and season with salt and pepper. Heat the olive oil in a cast iron skillet over medium-high heat. Sear the beef cubes on all sides.  You can do this in batches if you would like. Remove from the skillet and set them aside. Add butter and let it melt and then add the onion powder and garlic powder for 30-60 seconds. Sprinkle the flour into the pot. Stir well for another 30-60 seconds. Pour the beef broth into the pot and whisk the mixture well.  Then add the beef gravy, soy sauce, Worce
