Sausage and Beef Chili

Last night I made this Chili recipe for the fam and we ate all of it! There were so many seasonings and ingredients but it was SO worth it! If you make this, please let me know in the comments below. Enjoy! Ingredients: 1.5 pound ground beef 2 tbsp onion powder 1.5 tbsp garlic powder 28oz diced tomatoes 12oz tomato paste 2 tbsp Worcestershire sauce 1/8 cup chili powder 2 tbsp cumin seed powder 1 tbsp dried oregano 2 tsp salt 1 tsp pepper 3 bay leaves smoked sausage, horseshoe (one horseshoe) chili seasoning packet 1 can of kidney beans 1 can of black beans 1/2 cup water 1/4 cup Best Yet Mild Cheddar Cheese, to top Directions: In a skillet over medium heat, cook the ground beef with onion powder until the ground beef is browned, 6-8 minutes. Add the following to the slow cooker - ground beef with onion powder, garlic powder, diced tomatoes, tomato paste, Worcestershire sauce, chili powder, cumin seed powder, oregano, salt and pepper.  Stir until combined and then add bay leaves.  Cook o

Chicken Pad Thai

We got a Wok for Christmas which I have been so excited to use! I love cooking and I don't think I have ever used a Wok or even owned one. The Wok was perfect for this recipe - Chicken Pad Thai. I also used a pad thai sauce that I purchased from Amazon (link to purchase below) and it's more like a sweet and sour sauce. If you don't like sweet and sour sauce, you probably won't like this recipe. I used the entire jar because the original recipe (which was found on the back of the Rice Noodle box) only used 4 oz of chicken and 4 oz of noodles which was not enough for my family of three. Easy Cheesy Frito Pie

Another day, another blog. Since I am currently unemployed for the moment, I will be focusing more on blogging. Last night I made a Cheesy Frito Pie for the family. The original recipe can be found HERE . Apparently this is a childhood pie but it didn't ring a bell for me until I started eating it and then I realized that I'm sure I have had this before. It's a super unique recipe but I enjoyed it and cleaned my plate. Jace and Kevin liked it too. We used the Frito Scoops and used it to scoop up this pie which is more like a dip. Super filling and super delicious.  Ingredients: 2 pounds ground beef 1.5 tbsp onion powder 20 oz Ranch Style beans, drained 4 cups Fritos Scoops, crushed 20 oz Enchilada Sauce Green Onions for garnish Directions: Preheat oven to 350 degrees. Place the ground beef and onion powder on a large skillet on medium heat. Cook for 6-8 minutes or until cooked through. Spray a pan with PAM or spray and layer the meat in the bottom of the pan after drained.

It's been awhile since I have been able to share what I have been up to so I'll sum it up: - Due to COVID, after 9 months, I finally received unemployment on Christmas Day - I lost my job yesterday so I'm currently unemployed and looking for full-time work - I was able to go to Utah to visit my family the last week of 2020 and it was amazing - After 7 months of living in our new place, we finally ordered a 65" TV for our living room and I'm so excited - I purchased a stationary bike so I can workout more with my sister and once I get it set up, literally no excuses for my health - I literally just binge-watched season 1 of "Are You the One" on Netflix between yesterday and this morning  - Boyfriend bought me a new laptop which is so awesome because mine has been broken for years so I've spent a lot of time trying to figure this new laptop out - Expect more blogs from me as I have more time on my hands :)  ----------------------------------------------

Browned Honey Butter Garlic Chicken

Happy 2021! I am so grateful for a new year, for a new start, and for new beginnings! The last week of 2020 was probably one of the best weeks of 2020. Christmas Eve was spent at Kevin's Mom's house, Christmas Day was spent at ours and then the day after Christmas, Jace and I headed to Utah. I spent almost a week visiting with my sisters, brother, Mom, Ron, and kids. It was nice to have a vacation after a long and crazy 2020. And by long and crazy, I mean long, crazy, stressful, frustrating, all of the negative words due to COVID. But, 2020 is over and I'm looking forward to the future.  This Honey Butter Chicken recipe is my first food recipe of 2021! And it was SO good, I wish I would have made more.
