Kung Pao Chicken Recipe

Another day, another chicken recipe. It seems like I make a lot of these huh? Last night I made Kung Pao Chicken and it was good on top of Jasmine Rice! The original recipe was from Cafe Delites and I made a few replacements and removed some items and my new recipe is below.  Ingredients for the chicken: 2 boneless chicken breasts, cut into 1 inch cubes 1 tbsp dry sherry cooking wine 1 tbsp soy sauce 2 tsp baking soda 1 tsp cornstarch Ingredients for the sauce: 1/2 cup chicken broth 5 tbsp + 2 tsp soy sauce 2 tbsp balsamic vinegar 2 tbsp dry sherry cooking wine 2 tsp hoisin sauce 2 tbsp sugar 1 tsp cornstarch Ingredients for the stir fry: 5 tbsp vegetable oil 1 1/2 tbsp garic powder 1 tbsp ground ginger 1/2 red bell pepper, seeded and diced 1/2 green bell pepper, seeded and diced 2 tsp sesame oil 1/2 cup unsalted peanuts as an option Directions: Combine all ingredients for the chicken in a shallow bowl and marinate for 10-20 minutes. Chicken Broccoli Stir Fry

In case I haven't told you, my boyfriend is such an amazing cook. He always adds these extra touches to make meals even better than when I make them and I was lucky to enlist him last night to help me with Chicken Broccoli Stir Fry. This recipe is from Natasha's Kitchen and we changed up quite a bit of ingredients and measurements in both the stir fry and the sauce. We also doubled the recipe. Our version is below.  Ingredients for the Chicken and Broccoli: Two pounds chicken breast (3 of them) cut into 3/4" pieces 4 tbsp cooking oil 2 lb broccoli, cut into florets 1 tbsp onion powder Ingredients for Sauce: Two 2/3 cup of chicken broth 6 tbsp soy sauce 4 tbsp brown sugar, packed 2 tbsp cornstarch 2 tbsp sesame oil 2 tsp ground ginger 2 tsp garlic powder 1/2 tsp pepper Directions: In a small bowl, combine all the sauce ingredients and whisk to dissolve sugar and cornstarch. French Toast Recipe

Last night we had breakfast for dinner - definitely one of my favorite dinners that I will never get sick of. Who is with me on that one? I used the Food Network's French Toast Recipe and followed it step-by-step, didn't change a thing and would rate this a 10/10. Normally I change or adjust things in the recipe to make them my own but this one I just left as-is and had to share! Below is the full recipe: Ingredients: 1 tsp cinnamon 1/4 tsp ground nutmeg 2 tbsp sugar 4 tbsp butter 4 eggs 1/4 cup milk 1/2 tsp vanilla 8 pieces of white bread 1/2 cup sugar-free maple syrup Directions: In a small bowl, combine cinnamon, nutmeg and sugar and set aside.  In a skillet on the stove, melt butter over medium heat. In the meantime, whisk together the cinnamon combination, eggs, milk, and vanilla and pour into a pie plate or large bowl.  Dip bread in egg mixture and fry on the stove until golden brown. Slow Cooker Beef Stew

With so many Beef Stew recipes out there, why make this one? This one is unique because it is made with Creamy Potato Soup mix and an onion soup mix packet. It's juicy, not dry, and super easy to make. Read on for the recipe.  The full recipe is from Better Homes & Gardens but I changed it to make it my own. I originally had carrots to put in it but I smelled them and they ended up being bad so I only used beef stew meat, potatoes, creamy potato soup mix, water, and onion soup mix. Easy Peasy.  Ingredients: 1 pound beef stew meat, cubed 2 large potatoes, peeled and quarted 4oz bag of creamy potato soup mix (I found the family size and only used a portion of it) 2 cups of water 1 package of onion soup mix Directions: Combine meat and potatoes in the crockpot. In a bowl, stir together the potato soup mix, one cup water, and onion soup mix.  Pour over meat and potatoes.  Add one more cup of water to the slow cooker. Cook on low for 4 1/2 hours. With yesterday being November 1st, and a Sunday, all I wanted to do was put dinner in a crockpot and be lazy all day. And that's exactly what I did :P We watched football and didn't do much since the time change kinda threw us off a little bit. Kevin and I both agreed on this Slow Cooker Taco Pasta recipe and it turned out to be good - but even better with tortilla chips. Skillet Turkey Enchilada Meatballs

Happy Halloween! I hope everyone has a fun and safe Halloween. I wanted to share a recipe while I had some time. Last night I made these Turkey Enchilada Meatballs on a cast-iron skillet. I had mine with some toast and Kevin had his with spaghetti noodles. I removed three of the ingredients and changed three of the ingredients. The original recipe comes from Recipe Runner .  Ingredients: 1 pound ground turkey 2 tbsp onion powder 1/4 cup panko breadcrumbs 1 egg 2 tbsp chopped cilantro 1/2 tsp chili powder Salt and pepper to taste 2 cups enchilada sauce 1/2 cup shredded Garlic Jack cheese 1/4 cup shredded sharp cheddar cheese Directions: Preheat oven to broil. In a large bowl, whisk together the onion powder, panko, egg, cilantro, chili powder, salt, and pepper.  Add in the ground turkey and use your hands to combine everything together. Super Easy One Pan Cheesy Sausage Pasta

Last night Jace and I put together this One Pan Cheesy Sausage Pasta Recipe and we were surprised at how amazing it was. I had two bowls of it! It literally took 20 minutes to make, super easy. We changed five of the ingredients to make it our own below. Ingredients: 1 tbsp olive oil 14oz package of Turkey Sausage or Kielbasa, sliced into 1/4 inch pieces 1 tbsp onion powder 1 tbsp garlic powder 1 15oz can of spaghetti sauce 8oz short cut pasta (we used Penne AND macaroni, uncooked) 1 1/2 cups chicken broth 1/2 cup milk 1 cup shredded cheddar cheese Directions: Cut the sausage into 1/4 inch pieces. Heat a large skillet over medium and add oil. Add sausage and onion powder to the pan and cook for 7 minutes. The sausage should start to be brown. Add in garlic powder. Mix in spaghetti sauce, uncooked pasta, chicken broth and milk.  Stir and bring to a boil. Reduce heat, cover and cook for 10-12 minutes until the pasta is cooked. Stir in cheddar cheese until melted. Enjoy!
