Easy Beef + Broccoli Recipe

How I haven't gained so much weight eating all of this delicious food, I literally have NO idea. I am down almost 10 pounds in a year, which for me, has been super tough to lose weight. Still working on it but more on portion size and less of what I actually eat ;)  This recipe was also super super easy - Jace had two servings of this and for being 9 years old, that says a lot! Although he tends to like what I make, double servings is even better!  I was originally going to make this in the crockpot but I saw this sauce in the store - Sauce for Broccoli Beef by Lee Kum Kee (Albertsons) and it actually had a very simple recipe on the back of it so I just used that: - Flank steak or sliced/diced steak (we used both cubed steak and thinly sliced steak) - Broccoli - Sauce for Broccoli Beef by Lee Kum Kee - Olive Oil Heat 1/8 cup olive oil on the stove on high heat. Super Easy Beef Stroganoff

I haven't made Beef Stroganoff....ever?? This recipe was SO beyond easy and It's from Natasha K. in this group HERE on Facebook. I made a little less since we are only a family of 3. If you haven't joined this group, you really should. People post the most amazing food recipes daily! Anyways, here is the Stroganoff!  Ingredients: 8oz Egg Noodles 1 pound Ground Beef Salt Pepper A little bit of Garlic Powder Beef Gravy in the jar 1 dallop of Sour Cream A few tablespoons butter Directions: First you will want to brown the ground beef on the stove.  Add salt, pepper, and garlic powder. While that is cooking, make your egg noodles based on the directions on the package. Have both cooking at the same time. Once the ground beef is browned, add the gravy and sour cream and mix.  Once the noodles are done, drain and add the butter.  Combine the noodles and meat together and serve with Red Lobster Cheddar Biscuits. 

Homemade Chicken Fried Steak

Last night Kevin and I had the house to ourselves so we made a delicious homemade chicken fried steak dinner with corn on the cob and mashed potatoes. We used the Food Network's recipe originally but we only made two steaks - one for me and one for him - so we used less of the ingredients. And instead of making our own gravy, we used a store-bought brown gravy. Ingredients: 1 1/2 cups milk 2 eggs 1 1/2 cup flour 2 tsp seasoned salt pepper 3/4 tsp paprika 1/4 tsp cayenne pepper 2 chicken fried steak pieces salt 1/2 cup vegetable oil 2 tbsp butter Directions: To make the steak, you are going to set up an assembly line with 2 bowls. Mix the milk and eggs in one bowl and then in the second bowl you will have the flour, seasoned salt, pepper, paprika and cayenne.  Take one piece of meat, sprinkle with salt and pepper, dip in the flour mixture. Completely cover with the flour mixture. Place the meat in the milk/egg mixture, turning to coat and then place back in the flour mixture. Shake

Easy Smashburgers

If you are looking for a quick and easy dinner recipe, Smashburgers are it. They are made on the stove and are done within 5-10 minutes. Kevin is the one that has really introduced me to these. I never made homemade Smashburgers until he came along :) All you need is some seasonings - I used paprika, Italian Seasoning, Steak Seasoning, salt, and pepper. You also need Black Angus Beef Patties, a slice of cheddar cheese, and toppings such as lettuce, ketchup, and pickles.  Prepare your patty by adding seasoning to both sides - as much as you would like. Spray a pan with PAM or cooking spray and place on the stove under Medium heat. Place the patty on the pan and cook for about 2-3 minutes on one side. Flip over and cook for 3-4 more minutes. Use a spatula to smash the burger so it's super flat. Once that is done, add a slice of cheese on top and cook for 2-3 more minutes. You can use potato bread, or in our case, just regular hamburger buns. Add your toppings and enjoy!

Chicken and Vegetable Stir-Fry (and a spicier option if you prefer that)

 Last night's plan was to make beef and broccoli. We decided to get chicken instead since it was cheaper and then forgot the broccoli so we just decided to make a chicken and frozen vegetable stir-fry. Kevin made a spicier version which I listed below as well. Both turned out SO SO good! We served ours with rice and it was the perfect meal. We made some huge changes to ours below.  Ingredients for Chicken + Vegetables: 1 lb chicken breast, cut into pieces 2 tbsp olive oil 2 cups frozen vegetables Stir Fry Sauce Ingredients: 2/3 cup chicken broth 3 tbsp soy sauce 2 tbsp brown sugar 1 tbsp corn starch 1 tbsp sesame oil 1 tsp ground ginger 1 tsp garlic powder 1/4 tsp pepper Instructions: In a small bowl, combine all of the sauce ingredients and whisk. Set sauce aside.  In the meantime, cut chicken into bite-sized pieces.  Heat a skill

Easy 5-ingredient chili [no photos]

I made this super easy chili last night and I honestly didn't plan on turning it into a blog so I have no photos BUT it turned out soooo good and it was so dang easy.  - U-shaped horseshoe sausage - One can of red kidney beans - One can of black beans - Chili Seasoning Packet - 1/2 cup water Put all of the ingredients in a slow cooker and cook on high for 4 hours. In bowl, top with cheese and use saltines for dipping.  Enjoy! 

Super Easy Shredded Chicken Nachos (Chili's chips and salsa)

 Last weekend Kevin and I went to Chili's to-go and part of what we ordered was chips and salsa. We had some but had so much extra. I was looking through a post in this Keto group I am in and I saw this post from Katherine S. who brought up a chicken nacho recipe that I thought was worth trying. I used the chips and salsa from Chili's and the rest we made at home. I put two boneless, skinless chicken breasts in the crockpot with 1/2 packet of taco seasoning and one can of diced tomatoes. I let it cook on high for 4 hours, took the chicken and shredded it and then added the rest of the taco seasoning. I put it on the chips, cooked in the oven on 350 degrees for about 5 minutes, added some shredded cheese, cooked 5 minutes more and then when I took it out, I added lettuce on top and dipped the chips in the salsa. So good and so easy! [[I only put chicken on part of the nachos because Kevin cooked his separately]]
