How to Make Shredded Chicken with Bacon Gravy in the Crockpot

Yesterday was such a busy day that all I wanted to make for dinner was just a simple crockpot meal. We found this Slow Cooker Chicken with Bacon Gravy recipe from The Magical Slow Cooker and it was amazing! It was super easy to make and even more delicious over white rice and mashed potatoes! Instead of the minced garlic, we used garlic powder. I also used two pounds of boneless skinless chicken breasts instead of 1.5. If you try this recipe, let me know in the comments below! Ingredients: 2 pounds boneless skinless chicken breasts 1/4 tsp pepper 1 tsp dried thyme 6 slices of bacon, cooked and chopped 2 packets of .87oz chicken gravy mix packets 1 1/4 cup water 2/3 cup heavy cream for the end Directions: Cook six pieces of bacon on the stove and then cut into pieces. For those who have known me awhile, or my whole life, know that I am not a big coffee drinker. In fact, when my Mom and I would go to Starbucks in Utah, I would always get a cold drink such as a Vanilla Bean Frappuccino. Last week my cousin shared this recipe on Facebook and I was super excited to try it. We tried this last night and Kevin kept saying over and over how amazing it was. It took some time and was a lot of work but SO worth it guys. The original recipe was from Delish HERE . We made a few changes. Ours is below. We served ours with green beans and cheddar biscuits! Ingredients: - 1 package jumbo pasta shells, cooked 10 min (based on package) - 2 large eggs, beaten - 1 15oz container of ricotta cheese - 8oz shredded mozzarella cheese - 8oz nacho + taco blend, shredded - 8oz white cheddar cheese, shredded - 2 tsp dried basil - 1/2 tsp salt - 1 tsp pepper - 1 pound ground beef - 1 jar, 24oz pasta sauce Directions: Cook pasta per package instructions, should be about 10 minutes. Instant Pot Mac and Cheese

My mom bought me an Instant Pot for Christmas after I saw SO many recipes using one. In our old apartment, I used the Instant Pot one time and it was a chicken recipe that ended up being disastrous. Since then, I have been extremely hesitant to make a recipe using my Instant Pot. This past weekend I decided that I should try again but make an easier recipe and one that has steps to follow to fully understand the Instant Pot. The original recipe can be found HERE . Ingredients: 1 pound dried macaroni 4 cups water 4 Tbsp butter 1/2 Tbsp mustard 1 Tbsp salt  1.5 cups milk 4oz cheddar cheese, shredded 6oz mozzarella cheese, shredded Directions: In the stainless steel pot of the Instant Pot, combine dried pasta, water, butter, mustard, and salt. Place in the Instant Pot, lock in place and close the vent. Use manual mode to set the Instant Pot to High Pressure for 4 minutes. It should take 10-15 minutes to come to pressure and then it should beep, then it will count down

Slow Cooker Chicken Chili

Now that the Utah Jazz season has started, game nights need to have simple dinners. Kevin found this recipe for Slow Cooker Shredded Chicken Chili and it was perfect! This recipe was from Simply Recipes and we made this one our own. We don't use onion or garlic and instead we use onion and garlic powder, I also replaced tomato puree with tomato paste and we did not add any celery. We used Saltines to dip and it was so perfect! I will be making this again! Ingredients: 3 boneless, skinless chicken thighs 1 Tbsp onion powder 12oz tomato paste 1 cup chicken broth 1 Tbsp garlic powder 2 Tbsp chili powder 1 tsp cumin 1 tsp oregano 1 tsp salt 1 can black beans, drained and rinsed 1 cup corn, drained 1 Tbsp apple cider vinegar Directions: Combine the chicken, seasonings, chicken broth and tomato paste in the slow cooker. Cover and cook for three hours. Shred the chicken, add the can of black beans, corn and apple cider vinegar and cook for 45 more minutes. Enjoy

This Slow Cooker Enchilada Casserole was just the recipe we needed this weekend. This weekend was calm, relaxing and stress-free. We watched a lot of Netflix and just hung out. Kevin and I made Chili Cheese Dogs Friday night so I decided to make this enchilada last night. It was super easy and we only used 4 ingredients! The original recipe was from The Magical Slow Cooker which is one of my favorites for slow cooker recipes! The only difference from her recipe compared to ours was we didn't add olives and we adjusted a few measurements. Keep in mind that our recipe is only based on two people and there were so many leftovers! Ingredients: - 3 boneless, skinless chicken thighs - 12oz can of Enchilada Sauce - 8 corn tortillas - 2 cups grated cheddar cheese/mozzarella cheese Directions: Put the chicken thighs and enchilada sauce in a slow cooker and cook on high for 4 hours.
