Sharp White Cheddar Cheese Dip/Sauce

Last night I made nachos and used this Mexican White Cheese Dip/Sauce recipe from All Recipes to pour on top. Usually we buy pre-made cheese sauce so it was nice to actually make our own. I'm going to have two separate blogs - one for the Sheet Pan Nachos and one for the cheese sauce. I actually did this dip quite differently than the original. The original called for white American Cheese and I used Sharp White Cheddar Cheese. It called for milk and since ours was bad, I used half and half. And I did not use green chilies. Our version is below. Ingredients: One block of Sharp White Cheddar Cheese, cubed 1/2 cup Half and Half 1 Tbsp butter 2 tsp cumin 2 tsp garlic powder 2 tsp onion powder 1 pinch of cayenne pepper 1/2 tsp pepper Directions:  Place cheese (cubed), half and half, and butter in a medium saucepan on low heat. Super Easy Rigatoni Sausage Bake

Last night I made this Rigatoni Sausage Bake and it is definitely up there on one of my favorite pasta dishes. The original recipe was from Taste of Home . Instead of ground italian sausage, I used the horseshoe U-shaped sausage. I didn't add red pepper, mushrooms, or parmesan cheese. I used mozzarella cheese and cheddar cheese. Ingredients: One package of U-shaped, smoked sausage 1 package 16oz rigatoni 5 cups marinara sauce 2 Tbsp half and half 10-16oz mozzarella cheese, shredded 4oz cheddar cheese, shredded Directions: Cook rigatoni according to package directions and drain. Preheat oven to 375 degrees. In a large skillet, add sliced sausage and cook until sausage is no longer pink. Add in marinara sauce, 2oz mozzarella cheese and 2oz cheddar cheese. Homemade Lasagna without Ricatta Cheese

Last night for dinner I made this homemade lasagna. It took over an hour but it wasn't too difficult to make overall. Kevin and I would rather not have ricotta cheese so we found a recipe HERE that didn't contain ricotta. Instead, we used mozzarella, colby jack, and parmesan. Ingredients: 12oz can of spaghetti sauce 8oz can tomato sauce 3 Tbsp onion powder 1 Tbsp italian seasoning 2 tsp garlic powder 1 cup water 1 pound ground beef 8oz bag of mozzarella cheese 2 cups colby jack cheese 15 lasagna noodles, cooked and drained 3oz shaved parmesan cheese Directions: Fill a large pot with water and a few teaspoons of salt. Let boil. Cook lasagna noodles for 10 minutes, placing 2-3 in the pot at a time. Add the ground beef to a skillet over medium heat. Add 2 Tbsp onion powder and brown the meat. Add the spaghetti sauce, tomato sauce, and water. Add in the remainder onion powder, italian seasoning, and garlic powder. Let simmer for 15 minutes. Preheat oven to 35

Low Carb Chicken Cordon Bleu Bake

Usually I plan my meals one week in advance, so when I went through this recipe for a low carb chicken cordon bleu, I had assumed it was similar to a regular chicken cordon bleu. I was wrong. Jace and I both had some and we both enjoyed it a lot but it's a bake, so it's quite different than a regular chicken cordon bleu dinner.  This recipe is from Low Carb Yum . I have her cookbook but this recipe was one online. Her meals are super healthy and delicious. We copied this recipe except we replaced the parmesan cheese with mozzarella cheese and we used a smaller amount of chicken broth - her recipe said that people were commenting that it was too liquidy so I used less broth on purpose - and I did not use any pork rinds. Baked Macaroni and Cheese with Panko Topping

Life is about balance. Some days I have Keto meals and others I have amazingly delicious and full of carbs macaroni and cheese. Last night was one of those days. I ate ALOT of macaroni and cheese and may have topped it off with some Sour Patch Kids. The original recipe that I found was from here . I went to the store earlier this week to purchase Gruyere cheese since that was mentioned in the recipe - unfortunately it was $13 so I didn't purchase it. Instead, I used three cheeses (in the recipe below). I didn't even make any sides with this because it was filling enough for the three of us! Update September 10, 2024: I have been behind on updating my blogs for giveaways but since 2020 when I first put this blog together, I've had some huge wins! Keto Cheese + Pepperoni Roll-Ups

Do you ever crave healthy, delicious yet simple midnight snacks? Typically midnight is my bedtime but with it being the 4th of July, we have been staying up until 2am the last few nights. I wanted something filling but not fattening so I decided to try these Keto cheese and pepperoni roll-ups from Hip 2 Keto . They were super easy to make - I made three Swiss Cheese and two Cheddar. Directions below! Ingredients: 3 slices of swiss cheese 1/2 cup of cheddar cheese, shredded Italian Seasoning 10-12 pepperoni slices marinara/spaghetti sauce for dipping Directions: Preheat oven to 400 degrees. Spray a pan with cooking spray. Add three slices of cheese on the tray. Make two piles of cheddar cheese - 1/4 cup each. Put in the oven for six minutes. Remove from oven and add Italian seasoning and pepperoni slices. Let sit for a few minutes, use a spatula to pull up the cheese and then roll them up. Use the marinara for dipping.
