Crispy Breakfast Potatoes in 30 Minutes

Image
We are down to 8 days until we move. I am going to see a place today and Kevin and I will see a place tomorrow. I have Friday's off work so today will be spent looking at more places, putting together a grocery list and ordering food for the next 8 days. That means more recipes! So this recipe was actually made the same night I made the Cinnamon Rolls and it's a perfect breakfast side. The original recipe was from Food Network HERE . The recipe was fairly easy and super delicious. I followed this recipe to a T - no changes - and I give it 5-Stars. Super easy!! Ingredients: Salt and pepper 15 mini potatoes (or more if there are more than two people you are serving) 1/4 cup olive oil 4 Tbsp butter Directions: Bring salted water to a boil in a pot. Add the potatoes whole and boil for about 15 minutes - they should be almost fork-tender. Drain and dry then cut into wedges or dice. Heat the olive oil and butter in a skillet on medium heat. Add the potatoes and f

I'm sure you all are sick of hearing about our moving situation so I'll make this short. We have 9 days until we are moving and still don't know where we are going. I went and looked at a 2 bedroom in Atascadero today and he will let us know on Tuesday. I'm not 100% counting on that one so I'm moving forward with looking at a place tomorrow and hoping we can look at a few places this weekend. I still have a lot of packing to do so the weekend will be packing and selling items that we don't want to take with us. I'm looking forward to moving, I think we need a restart so it should be good. I just hope we are able to find a place so we don't have to move twice. Like always, I'm still making time to cook almost every night. It really helps with keeping my mind off things, plus I can then make blogs and let you know how wonderful (or not so wonderful) the recipe turned out :) Yesterday was supposed to be Kevin's last day at his job so they had a

Keto Cinnamon Rolls

I decided to take a day break and not look for apartments today. I may do that tonight but I decided to go penny shopping at Dollar General instead. I have been penny shopping for about a year now and absolutely love it. If you want to read more about penny shopping and what I have found and how it works, you can click my blog here --> Penny Shopping at Dollar General If you don't know or haven't heard of Penny Shopping, here is just a glimpse of what I got today - all for pennies! Back to the grind, and apartment hunting, tomorrow. I am going to see a place tomorrow and Friday so hopefully one of those works out! Last night we made breakfast for dinner (am I the only one that calls it brea-fast?) and I really need to get my weight back on track so I decided to try these Keto Cinnamon Rolls from Keto Smart where the dough and frosting are both made from scratch. As usual, I didn't have a few ingredients so I replaced them with other ingredients. My recipe and

So we are moving out next Saturday (11 days!!) and have NO idea where we are moving to - still. It's so frustrating and so stressful. We thought we were set in Barstow but since that plan changed, we are on such a strict schedule to be out. I know we won't be homeless but still! I have 4 pages worth of people that I have contacted and Kevin's Mom has been messaging me rentals so I'm hoping to find a place ASAP. I am going to see a place in Atascadero on Thursday and one on Friday so hopefully one of those work out - we already applied for both and explained the situation to both of them already so I'm hoping we just see one we like and get it right then! I can't wait until we can buy a house. I'm sure that won't be for a few years - and when we decide on a more permanent area to move to. California is SO expensive, never live here! LOL Anyways, cooking and baking has helped with keeping my mind off of the stress. Last night I made these Chicken Enchila

Slow Cooker Dr. Pepper Boneless Ribs - Mother's Day Recipe

Image
Yesterday for Mother's Day we made these easy pork ribs in the slow cooker. The original recipe HERE  said to put them on low for 8 hours. They were good after 6 1/2 hours. We added mashed potatoes and gravy and it was amazing. The ribs were so tender and soft. Enjoy! Ingredients: 4 boneless pork ribs 1/4 tsp pepper 1/2 tsp garlic powder 1 tsp liquid smoke 1 cup barbecue sauce 12oz dr. pepper Directions: Place 4 boneless ribs in the crockpot. Sprinkle the pepper, garlic powder and liquid smoke on top. Drizzle over the barbecue sauce and then pour in the Dr. Pepper. Cook on low for about 6 1/2 hours. If the ribs fall apart, they are done. Don't open the crockpot until they are done. Serve with gravy and mashed potatoes.

Moist and Delicious Banana Bread

You guys...we are moving in two weeks and have no idea where we are going to live. Talk about stressful! I am so glad that we have cooking and baking that can take my mind off the stress - even if it's just for a few minutes. Last night I made this banana bread (I can finally cross off "Made Bread" off the Coronavirus Bingo list!) and I'm pretty sure I haven't made bread from scratch before. I had saved this photo from Facebook and I have NO idea who posted it - if you know who it is, let me know so I can give proper credit! Just like I mentioned in the previous two recipes, I ran out of flour so I have been using cornstarch. This recipe was no different (flour is on my next grocery delivery). I followed the recipe pretty closely, I used butter and then instead of sugar, I always use Monkfruit. I stirred in two beaten eggs and 3 smashed bananas and then salt, baking soda, and 1 1/4 cup cornstarch. Then folded in 1/3 cup walnuts. I had to cook it a little bi

Three Cheese Macaroni and Cheese

Image
Warning **You will not just eat one serving of this!!!** You guys will be getting two recipes today because I made two delicious recipes last night - Baked Three Cheese Macaroni and Cheese and Banana Bread! This one will be the macaroni. Like always, we added bacon on top because bacon makes everything better. And since the last post, I didn't purchase flour so I used cornstarch instead - YES cornstarch and it worked just as good! The original recipe was from Better Homes and Gardens HERE . Ingredients: PAM spray 1 box penne 3 Tbsp butter 3 Tbsp cornstarch 2 cups milk 1 Tbsp onion powder 2 tsp ground mustard 1/4 tsp salt Pinch of cayenne pepper 2 cups shredded swiss cheese 1 cups shredded cheddar/taco cheese mixture 1 cup shredded Gouda cheese 6 slices of bacon - cooked and diced Directions: Preheat oven to 350 degrees. Cook penne according to package directions and drain. While that is cooking, in a medium saucepan, melt butter over medium heat and sprinkle
