Smoked Sausage and Tortellini in the Cast-Iron Skillet

I am trying to do as much as I can with bringing you guys a recipe every night this week at least while we are all quarantined and stuck inside. These past few weeks I have been riding the wave and I didn't realize until tonight that I am lucky I did my major grocery shopping this past weekend. I ordered Instacart and they were out of ground turkey and ground beef. They were also out of raspberries, potatoes and when I went to the store this past weekend they were also out of water. Lucky for me, this recipe was super easy, didn't have a lot of ingredients or preparation and 9 year old Jace helped me with it as well. One thing I have been trying to do too is have Jace help me cook and he loves it. Our favorite show is Diners, Drive-in's and Dives. The original recipe was from Hillshire Farm  but we didn't add any bell pepper, garlic, or onion. I feel like the past week of Coronavirus has been such chaos. I managed to probably be the last one to take on the grocery store yesterday and, even though there wasn't too many people, I still had a bad experience. I was able to get a lot of what I needed but the staples were gone - potatoes, bananas, water bottles, and tomatoes. I've decided that moving forward I'm going to be using Instacart. #Quarantinelife Also, is anyone else's kids out of school? Mine is out of school for one month. I can't even believe it. I am super grateful for Jace's Nana though who is taking Jace every weekend while he is out of school. I am lucky and work from home and my boyfriend still has his job as well. My goal this week is to continue to create amazing recipes for you guys so that, even if you are stuck at home, you can still provide your family with a delicious meal. Four Sisters Cheesy Lasagna

Last week I spent the entire week with my sisters, nieces, nephew, and cousins. It was so much fun! We went to the beach, went and got ice cream, played Yahtzee and tennis. We had a BBQ for my Nana's 80th birthday and made this Lasagna a few days before. This original recipe was from Betty Crocker . I renamed it Four Sisters because it took four of us, sisters, to make it ;) We made this recipe a little bit different. Originally we weren't going to add Cottage Cheese but I got outvoted so we did end up using it. We eliminated the Basil Pesto and replaced the chopped Onion with Onion Powder. We also used two different types of Tomato Sauce and two bags of mozzarella cheese instead of one bag. Enjoy! Shredded Pulled Chicken BBQ Hamburgers

Is anyone else super happy that it's Friday? This week I went to the gym a few times and got down to my lowest weight of down 11 pounds since June. I was at a plateau for so long and I finally decided to change up the way that I eat breakfast and also workout more. I'm going to try and go to the gym today as well. Last night I made this Pulled Chicken in the crockpot but I have to preface this recipe by saying that the original recipe was BBQ Chicken and there is literally no BBQ sauce or anything BBQ-related on this burger. The original recipe is HERE and there are many more like it on Google but I changed mine up for a few reasons - I didn't have Tomato Sauce so I replaced it with Tomato Soup (still tasted delicious!), I didn't use Green Chiles or Ground Chipotle Chile. Guys, I am so glad it's a new week! After a long week last week and a weekend of not feeling super great, I'm finally back at it. I looked at my Fitbit last night and I got 8 hours and 40 minutes of sleep last night! That's what happens when I'm so ridiculously tired that I don't stay up on my phone until midnight. Although, let's be real, the biggest reason of why I'm on my phone is so I can find more recipes to make delicious meals which leads to delicious blogs! Kevin has been sick the past few days unfortunately so I didn't want to make a huge meal - especially since he hasn't really been eating. I saw a recipe on this Facebook group that I'm in HERE and conformed it to my own. I gave Jace the choice of Calzones or Red Beans and Rice with Sausage and he said Calzones so here we are. Turkey Chili with Beans in the Crockpot

Last night we wanted to make an easy and simple recipe so we decided to make this Turkey Chili with Beans recipe. Part of the recipe was made up and the other part was from Cooking NYTimes .  Ingredients: One pound ground turkey, cooked 1 cup chicken broth 1 can Diced Fire Roasted Tomatoes 1 pack chili seasoning 1 can red kidney beans 1 can black beans 1 tsp chili powder 1 tsp cumin 1 tsp oregano 1 tsp pepper Directions: Add everything in a crockpot and set on low for 4.5 hours. Chicken Marinade for Chicken Thighs and Drumsticks

I think I'm just gonna stick with the fact that my weeks are always going to be long and busy. No matter how much I try to have a break, it doesn't ever happen haha (during the week, not weekends luckily). It's OK though. Last Saturday Kevin and I were able to go out on an amazing date and it has been well worth the busyness. We went to the movies, out to lunch and dinner, we went to the doughnut shop, and watched the boxing match at the movie theater. He paid for ALL of it.
