Bacon Cheeseburger Casserole - Keto

This blog has been on hold for the past week and, once again I am extremely behind at telling the whole world about amazing Keto recipes. I can't even beginn to tell you guys how insanely busy this past week has been. We moved out of our apartment and moved into a larger unit (YAY), I started a new job from home yesterday (another YAY!) and we have been unpacking. We also spent five days trying to get our internet/cable turned on so that part has been a nightmare. As you can imagine, I haven't had too much time to make delicious and healthy dinners and hoping I can get back into that in the next week or so. In the meantime, I wanted to share this amazing and delicious Keto Bacon Cheeseburger Casserole recipe. Easy Crockpot Ravioli Lasagna

We are officially moving into our new apartment tomorrow so yesterday we packed up all the boxes. As you can guess, I didn't have much time to cook so I put together a simple crockpot ravioli lasagna. I might be weird when I say this but I love when it gets crispy - it makes it 1000% times better! The original recipe is actually called Lazy Crockpot Lasagna but there aren't any lasagna noodles - it's ravioli so I changed mine up a little. It's not healthy, I know, but I'm still down about six pounds. Once we move I'm hoping to get into a better routine. Also, this recipe is SUPER easy! Also, because of the move, I didn't get to take a lot of photos (sorry!) but it was delicious and I hope you enjoy it! Chicken Cordon Bleu

This past weekend was full of BBQ, cheesecake, amazing family, and amazing memories. Every once in awhile I have to step out of my "diet" and just enjoy some delicious food. Last night I finally did some cooking and made a delicious Chicken Cordon Bleu recipe. The original recipe that I found  HERE used coconut shreds in replace of breadcrumbs. My family is not big on coconut shreds so I stuck with breadcrumbs but that is an option to change out. Ingredients: 4 boneless, skinless chicken breast pepper jack cheese (as much as you would like), shredded 4 pieces of ham 4 slices of mozzarella 1 egg 1/2 cup breadcrumbs (or shredded coconut) 3/4 teaspoon oregano pepper, to taste Directions Wash chicken and pat dry. Make an incision in the side of the chicken without cutting it in half. Open fillet and season with pepper and oregano. Lay 1 slice of ham, shredded pepperjack cheese and one piece of mozzarella cheese on one piece of chicken. Fold the edge over. In

Crack Chicken Casserole - Easy and Low Carb!

As promised, here is the second chicken casserole recipe. Out of the two, this one was my favorite. It is called Crack Chicken and it's literally that. I ate like half the casserole myself :/ So delicious, so addicting, so good, and low carb! The original recipe can be found HERE  but we added our own adapted recipe below. Ingredients: -2 boneless skinless chicken breasts, chopped and cooked -1/2 pound bacon, chopped and cooked -1 cup shredded cheese -3 eggs -1/2 cup heavy whipping cream -1/2 cup ranch dressing Directions: Preheat oven to 350 degrees. Spray a casserole pan. Spread chicken and bacon in bottom of pan. Top with shredded cheese. Whisk together eggs, heavy cream, and ranch dressing. Pour on chicken mixture. Bake uncovered for 32 minutes. Enjoy (but not too much!) 

Keto Chicken Parmesan Casserole

Most of my recipes tend to be leaning toward the Keto diet but I'm not strictly on Keto. My goal has been to eat low carb or healthier, especially when the gym isn't a priority. Last night we had Keto Chicken Parmesan Casserole. The original recipe can be found HERE  (I like to give credit when due). I adjusted the recipe below based on our preferences. We also have another adult in the house so the food is typically gone every night instead of having leftovers which has been nice. Although this recipe I would not have minded having leftovers. Chicken Stew in the Cast-Iron Skillet

A few nights ago we made this Chicken Stew. Again, not super healthy but quick and easy :) We are moving in a few weeks so our meals haven't been the best :/ But this one was good, like all of the others. I made some garlic bread as a side and it worked out perfectly. The original recipe can be found HERE . Below is our recipe. Ingredients: -1 Tbsp olive oil -5oz bacon, chopped -1.5 pound boneless skinless chicken breast, cubed -1/2 tsp salt and pepper -1 tbsp garlic powder -1 tbsp onion powder -6 mini carrots or 3 regular sized carrots, sliced -1 1/2 cups red wine -4 tbsp flour -3 cups beef broth -14oz canned crushed tomato -2tsp worcestershire sauce -1 1/2 tsp basil, dried Directions: Place oil and bacon in a large cast-iron skillet over high heat. When the oil is heated and bacon releases some fat, add chicken. Sprinkle with salt and pepper and cook until bacon and chicken are browned. Add garlic and onion powder, cook 1 minute. Homemade Chicken Pot Pie

Last night we made this homemade chicken pot pie. I know, I know, not healthy, but every once in awhile you just have to prepare a good, delicious meal full of carbs :) Also, I don't think I've ever made my own pot pie or even a pie in general. I have helped but not actually made one from scratch on my own. I was very nervous on how it would turn out but as long as you follow the instructions, you should be good :) The adults each had two slices and Jace had one so we ate almost the entire thing in one night. It was SO good and the smell was amazing. I say every recipe is good, but only the good ones get a blog ;) Anyways, just a few things before we start.
