Crockpot 3-Layer Ravioli Lasagna

Image
Yesterday was Father's Day so we wanted to make something delicious but rather easy. This "lazy" crockpot lasagna dinner was perfect. It did take a little bit of time before putting it in the crockpot but once everything was in, it was just a waiting game. What did you do for Father's Day? If you make this recipe, please let me know in the comments below! The original lazy crockpot lasagna recipe can be found HERE . Ingredients: 1 pound ground beef 1 tsp Onion powder 1 tsp Garlic powder 1 1/2 tsp Italian Seasoning 48oz pasta sauce (we used two 24oz jars of Ragu) 4 cups mozzarella cheese 2 packages of uncooked raviolli (the original recipe called for 25-30oz, ours ended up being about 24oz and it worked out perfect) Directions: Brown ground beef, onion powder, and garlic powder over medium heat until no pink remains. Drain fat. Stir in Italian seasoning and pasta sauce. Cover and simmer for 10 minutes. Spray crockpot. Layer sauce, ravioli, and cheese an

Cast-Iron Skillet Macaroni and Cheese with Bacon and Whiskey

Image
Have you ever made Macaroni and Cheese with Whiskey? Me either. This Macaroni and Cheese recipe was made in the Cast-Iron Skillet, with whiskey, bacon, and of course, lots of cheese! There are A LOT of ingredients and it is a time-consuming recipe but really, really good. It is a very unique recipe that can be found HERE . We made some changes and our recipe is below :) Ingredients: 1/2 tsp salt 12 pieces of smoked bacon 2 Tbsp butter 1/2 cup Whiskey (Jack Daniel's is in the original recipe) 1/2 cup chicken broth 1/2 cup flour 1/2 tsp paprika 1 tsp garic powder 1/2 tsp chili powder 1/2 tsp Worcestershire sauce 2 cups milk 4oz cheddar cheese, shredded 8oz elbow pasta 4oz smoked provolone and asiago cheese (I actually found a shredded cheese blend with these two cheeses and others so if you find one with both, I recommend it!) Directions: Bring pot filled with water to a boil over high heat. Once it boils, add salt and pasta (8oz). Redu

Homemade Beef Empanadas from SkinnyTaste

Image
My friend shared this Empanada recipe on Facebook from Skinny Taste. The original recipe can be found HERE . This recipe consists of homemade dough which, to me, was the hardest part. I added one Fage yogurt which I don't think was enough. The empanadas did turn out really really good and I was able to make about ten, but I would suggest using one cup of yogurt (and Fage yogurt) like the original recipe calls for. Here is my version: Ingredients: 1/2 pound ground beef 1/2 teaspoon garlic powder 1/2 teaspoon cumin 1/2 teaspoon salt 1/4 teaspoon chili powder 1/4 teaspoon paprika 1/4 teaspoon basil 1/4 teaspoon onion powder 2 tablespoons water 2oz tomato paste 2oz mild taco sauce Shredded cheddar cheese (as much as you would like) Ingredients for the Dough: 1 cup and 5oz of flour 1 1/2 teaspoons baking powder 3/4 teaspoon salt 1 cup Greek Yogurt (must be Stonyfield or Fage, not Chobani) 1 egg, beaten Directions: Brown beef in a large skillet. When

Cheesy Baked Burritos with Enchilada Sauce

Image
It has been awhile since I have  made a blog post about food. There are a few reasons for that. I am either cooking normal food (haha) and nothing outrageously worth writing a blog over, I have been working more which equals less blogging time, and, starting now, I am really wanting to start eating healthier. We all say that though, right? Sometimes we just have to eat the carbs. We made this recipe last night, it was a little messy but pretty delicious. It doesn't help that I accidentally bought HOT Enchilada Sauce instead of Mild so my mouth was burning almost the entire time. Jace said this was the best food I ever made but then only ate a quarter of his burrito because it was too hot. Kevin is the only one who loves the heat. So if you don't like heat, I suggest buying the mild enchilada sauce ;) The original recipe can be found through DELISH here . We definitely made some changes and our recipe is below. If you try this recipe, let me know in the comments below! I wou

Baked Ground Beef Stroganoff Casserole

Image
A few weeks ago I made this Baked Stroganoff Casserole. Now I have to preface this by saying that I am not a huge fan of Stroganoff but I've noticed that everything tastes better when baked. The original recipe was found HERE . We changed a few things up to our liking. The full recipe is below. If you try this recipe and like it, please let me know! :)                                     Ingredients: 8oz egg noodles 2 tablespoons vegetable oil 1 lb ground beef Salt, pepper to taste Onion powder, to taste Garlic powder, to taste 3 tablespoons butter 2 tablespoons flour 2 1/2 cups beef broth 3/4 cup sour cream 1 tablespoon mustard 1 + 3/4 cups shredded cheese (plus more if you would like) Directions: Cook the egg noodles for one minute less than instructed on the package. Drain and set aside. Heat the oil over medium heat on the stove. Add the ground beef, salt, and pepper and cook all the way through. Remove the beef and set aside and leave the grease in the pan.

Marinated Chicken and Potatoes in the Cast-Iron Skillet

Image
If you have one day to prepare and marinade the chicken, I would strongly recommend this recipe by Eat Well 101 . We made ours a little bit different but overall, it was tasty. Everything tastes better in a cast iron skillet though, doesn't it? Also, I loved that I didn't feel gross after I ate because it was a fairly healthy meal. It took about 30 minutes for me to make once the chicken was done marinading. I let the chicken marinade for about 24 hours. Ingredients for the marinade: 1 1/2 pound chicken breast (boneless, skinless) cut into strips 1 tablespoon olive oil 1/4 cup soy sauce 1 tablespoon hot sauce (we also balanced out the heat with some Mild packets from Taco Bell) Pepper Directions for the marinade: Using a cutting board, cut the chicken breast into strips. Place in a large bag. Add all ingredients into the bag. Let sit in the refrigerator for 24 hours. Ingredients for the potatoes: 6 baby potatoes, diced 1 tablespoon olive oil 3 tablespoons but

Crockpot Pizza Bake with Lots of Cheese

Image
I feel like I am so behind with the blog posts and my days are just going past me like crazy. A few nights ago we made this Crockpot Pizza Bake. Although the Original Recipe HERE called for rigatoni, penne, or ziti pasta, we used shells and you can really use any pasta. As always, we added extra cheese. Although it took awhile to prepare, once it was in the crockpot, it was super easy from there. Ingredients: 8oz box of shells (or any short pasta) 1 pound italian sausage, ground 1/2 pound ground beef 8oz package of sliced pepperoni onion powder, to taste 48oz pizza sauce 2 teaspoons italian seasoning garlic powder, to taste 16oz shredded mozzarella cheese Directions: Bring a large pot of water to a boil. Add the pasta and cook for 7 minutes. Drain and set aside. While the pasta is boiling, cook the italian sausage and ground beef together in a large skillet over medium heat until browned. While that is cooking, layer the pepperoni slices between a couple paper towe
