Chicken and White Bean Enchiladas

Image
The original recipe was taken from HERE  I took this recipe and made it my own based on personal preferences. Ingredients: For the enchiladas: one tsp olive oil one 15.5oz can of Navy beans (I used Cannellini beans) two cooked and shredded chicken breast 1/4 cup water one chicken bullion one tbsp ground cumin one tsp. onion powder one tsp. garlic powder For the enchilada sauce: one tbsp butter one tbsp onion powder one cup chicken broth two tbsp flour salt 1/2 cup sour cream 3/4 cup cheese tortillas fresh cilantro Before mixing the ingredients, we need to create the shredded chicken breast. This was actually easier than I thought. I put three chicken breast in a pan, set the oven to 375 degrees, added 1/4 cup water in the pan and seasoned the chicken with salt and pepper. Cook 35 minutes.  I put the chicken in the refrigerator last night so it was not frozen when I put it in the oven. I only ended up using two of them for t

Broccoli and Cheese Twice-Baked Potatoes

Image
This recipe originated from  HERE I'll be honest, I don't like baked potatoes. But there is something about twice-baked that makes them so delicious. I took the recipe and made it my own based on our preferences.  Ingredients 4 medium potatoes, washed and dried olive oil 3 1/2 tablespoons butter, soft 1 cup Greek yogurt 1/4 cup buttermilk 1/2 teaspoon pepper 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon paprika one bag of frozen broccoli, cooked, chopped, and divided 2 cups cheese  Preheat oven to 400 degrees. Place potatoes in a baking dish and bake for one hour. Remove from oven. Once potatoes are cool enough to handle, slice each one in half, lengthwise.  Scoop out the potato pulp and place it in a large bowl. I used an ice cream scoop as it made it easier to scoop. Be sure to leave the skins intact and leave them on the baking sheet. Put some olive oil on the bottom of each skin and set aside.  Add t

With Fall quickly approaching, what better way to feel comfort than an easy potato soup in the crockpot. With frozen hash browns, bacon bits, cheese, and cream of chicken soup, how can you go wrong? Recipe inspiration:  https://www.keyingredient.com/recipes/917535034/easy-crock-pot-potato-soup/ I found the recipe (above) and adjusted the recipe to my taste. Anxiety: Beating and Conquering

Image
This blog post is based on a book that I am writing about conquering or dealing with anxiety. And by anxiety, I don't mean just freaking out every once in awhile. I am talking about full-on can't-go-anywhere-because-I-am-too-afraid anxiety. Like, have to sit on my couch and play nintendo type of anxiety. Can't drive or else I may end up at the hospital anxiety. This was back in 2012 and I can't believe how much of a difference and in a better place I am now. I have worked on my book since moving to California so here is just an introduction of it. I hope you enjoy it. As I start working on it more, I will share but if you have any insight, please comment below as well! Title: Anxiety: Beating and Conquering Author: Abbie Guerrero The controller was covered in my sweat as I clenched it as hard as I could. I sat at the end of my bed, trying to focus on the game I was playing. Jump. Duck. I couldn't help but think of many other things going through my mind. Physi

I'm a total Stress Ball

Have you ever felt like you have done everything that you can - without lowering your standards, values, or goals - but nothing seems to go your way? Blogging and writing are my therapy so, if you are reading this, brace yourselves. This may be repetitive as I have mentioned over and over how tough it has been living out here in California. I moved here 18 months ago on hopes, dreams, $25,000, no debt (except my never-ending student loan) and dreams of winning the lottery (that doesn't seem to be a joke anymore). The year of 2018, I have been hoping for getting that "big break" with a job. See, I am the type that always strives for more, works hard, sets goals, and focuses on what I want and reaches for it. When I see a Social Media Manager job position here in Central California with a pay range of $11/hour (no joke! I have a screenshot if you don't believe me!) it makes me re-think my strategy and plan in life. This plan and future worked for me in Utah and I had no

Mastering the Mindset of Wealth

When my brother was 18 years old, I remember him telling me, "Abbie, Lexi (little sister) and I both know you are rich." This quote has stuck with me because I have never been rich. I like to say that since I was 20 years old, I have enjoyed "financial freedom." I would take my little sister to the mall and spend hundreds of dollars at once. 🛍️🛍️ I would go out to eat, go where I wanted and when I wanted, go on vacations, go to the casino and spend hundreds (or more), and order clothes online as if I didn't have a budget. Until I sold my condo in 2016. I made a lot of money in an amazing Utah economy and then it hit me. I paid off $30,000 in debt. Not only that, but most of it was credit card debt. This didn't include my student loan! So, to my brother who is now 21, I have never been "rich", I have just enjoyed living outside of my means. 💳💳 I have always had a love/hate relationship with money. Mainly love because when you have a credit car
