Air Fryer Turkey Meatballs

Although I'm officially on my 7th week of being sick (antibiotics have not helped me really. I have a little more energy but apparently with pneumonia, it can literally take 3-6 months to start feeling normal again.) I am out of work and so I have been cooking dinner every night for the family. We all enjoyed this one - Air Fried Turkey Meatballs. This recipe was pulled from HERE . She made kabobs with hers and we made spaghetti and meatballs with ours.  I was looking for a healthier meal since we stopped using EveryPlate (I have more time to cook without working) so using ground turkey in place of ground beef was a healthier option. They are super easy to make and adding them to the Air Fryer gives them that extra crunch. We use our Air Fryer ALL the time. I typically make meatballs on the stove but I would highly consider using the Air Fryer if you want a crispy outside and a perfectly cooked inside. You don't have to make these with spaghetti, you can eat them by themselves,

Skillet Turkey Enchilada Meatballs

Happy Halloween! I hope everyone has a fun and safe Halloween. I wanted to share a recipe while I had some time. Last night I made these Turkey Enchilada Meatballs on a cast-iron skillet. I had mine with some toast and Kevin had his with spaghetti noodles. I removed three of the ingredients and changed three of the ingredients. The original recipe comes from Recipe Runner .  Ingredients: 1 pound ground turkey 2 tbsp onion powder 1/4 cup panko breadcrumbs 1 egg 2 tbsp chopped cilantro 1/2 tsp chili powder Salt and pepper to taste 2 cups enchilada sauce 1/2 cup shredded Garlic Jack cheese 1/4 cup shredded sharp cheddar cheese Directions: Preheat oven to broil. In a large bowl, whisk together the onion powder, panko, egg, cilantro, chili powder, salt, and pepper.  Add in the ground turkey and use your hands to combine everything together. Healthier Swedish Meatballs

Is anyone else so excited that Monday is a holiday? I love what I do but it is nice to have a little break and, every once in awhile, a 3-day weekend. I have two blogs to catch up on and hopefully I'll be able to get both completed this weekend. On a happier note, it is Valentine's Day so I hope everyone has an amazing and special Valentine's Day! Kevin and I went to the casino last week so that was our early Valentine's time together. We may take Jace to go see the new Sonic movie - he has been talking about this movie for months! What are your Valentine's Day plans? A few nights ago I made delicious healthier Swedish Meatballs. I used Ground Turkey and Ground Beef as well as seasonings, egg, and breadcrumbs. I didn't have the noodles that you normally use so I just made Shells and it worked perfectly.
