Tri-Tip Chuck Roast with Potatoes and Carrots

 For those who don't know, I went out to Utah last weekend for about a week so my wonderful sister served me dinner every night and I didn't have to cook which explains the gap in blog posts :) I have been back for four days and have prepared a week of meals so hopefully you will be seeing more recipes from me :)  The original recipe that I used for the roast can be found from AllRecipes HERE . This tri-tip roast that I used (half off at Smart and Final!) was covered in this amazing roast and gravy recipe. If you love a good gravy, this recipe is for you. This perfect slow cooker roast on a rainy and chilly day

I went to Target yesterday and purchased a roast since it's been awhile. Little did I know that it would be raining all day so the slow cooker roast worked out perfectly in my favor. Plus it was SUPER easy to make. The only thing that I dislike about Target meat is the fact that I tend to either buy already expired meat or meat that has A LOT of fat on it. Unfortunately, this roast did have a lot of fat on it so I think I only ended up with a pound and a half of meat. The original recipe called for two to two and a half pounds of meat.
