Baked Enchilada Cups

Initially these were a little hard to make only because I saw the recipe on a Facebook page called "Best Bites" but they didn't have a link to the full recipe or any measurements so I just kind of made things up based on the video :) Here is my version. By the way, these are A.MAZ.ING. They make one dozen and I may have eaten all but two :) Ingredients: 4 flour tortillas, medium-large Two chicken breasts, cooked and shredded One can of Cream of Chicken Soup One cup of Red Taco Sauce 3/4 bag of the 8oz bag of Monterey Jack Cheese 1/2 of Enchilada Sauce packet Directions: Take the tortillas and divide each tortilla into fourths. Place each fourth in a cupcake pan. In a bowl, mix the shredded chicken, one can of Cream of Chicken Soup, taco sauce, cheese, and enchilada packet. Add to the tortilla and bake for 400 degrees, 15 minutes. Top with tomatoes, sour cream, more taco sauce, shredded lettuce, olives, or anything you would like! D

The Most Amazing Patty Melts You Will Ever Have

The original recipe came from HERE . We made this recipe our own below. I had my boyfriend make this because he is a great cook and makes things his own way. If you haven't tried this before, I recommend it. I ate one patty melt within minutes it was so good!  Ingredients: 1 pound Ground Beef 2 Tbsp Butter 1 Tbsp Worcestershire Sauce 8 Slices White Bread 4 Slices Sharp Cheddar Cheese 4 Slices Provolone Cheese 4 Tbsp Butter, Softened Directions: Divide ground beef into four, thin patties. Heat over medium heat using 1 Tbsp Butter and add two beef patties in a pan. Season each patty with Worcestershire sauce. Cook until patty has browned on both sides and flip over once after five minutes. Remove cooked patties and move to a plate. Wipe skillet clean and spread softened butter onto one side of bread and place onto skilled with the butter side down. Broccoli and Cheese Twice-Baked Potatoes

This recipe originated from  HERE I'll be honest, I don't like baked potatoes. But there is something about twice-baked that makes them so delicious. I took the recipe and made it my own based on our preferences.  Ingredients 4 medium potatoes, washed and dried olive oil 3 1/2 tablespoons butter, soft 1 cup Greek yogurt 1/4 cup buttermilk 1/2 teaspoon pepper 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon paprika one bag of frozen broccoli, cooked, chopped, and divided 2 cups cheese  Preheat oven to 400 degrees. Place potatoes in a baking dish and bake for one hour. Remove from oven. Once potatoes are cool enough to handle, slice each one in half, lengthwise.  Scoop out the potato pulp and place it in a large bowl. I used an ice cream scoop as it made it easier to scoop. Be sure to leave the skins intact and leave them on the baking sheet. Put some olive oil on the bottom of each skin and set aside.  Add t
