Mexican Pizza in Cast-Iron Skillet

Last night's dish was Mexican Pizza....but not just any Mexican Pizza.....Mexican Pizza on the cast-iron skillet. It was amazing. I had more than one whole one. You can find the original recipe HERE . Our recipe was changed and updated below. I only took a few photos because, man, this dish got messy! Especially with all of the enchilada sauce. But I do have to say it was pretty dang amazing. If you tried this, let me know your thoughts below! Ingredients: 1 pound ground beef 1 envelope taco seasoning 10 flour tortillas 1 can refried beans 1 big can of enchilada sauce At least two cups of Shredded Cheese Sour cream (optional) Rotel tomatoes (optional) Green onions (optional) Black olives (optional) Directions: Brown and crumble ground beef in a large skillet over medium-high heat. Drain. Add taco seasoning packet with 3/4 cup water and bring to a boil. Reduce heat and simmer five minutes, stirring occasionally until most of the water has evaporated. Set mixture

1/2/19 I had a dream that I was a teachers assistant for I think Seniors? We were in like a dorm though and this couple was talking about collecting rent from each other. I told them that if they collect money, we will find out and they will be in trouble. This other kid was doing a presentation and went to the front of the class and said he was circumcised. Then I sat down and accidentally shot this arrow thing behind me when the teacher was talking and it hit a guy in the arm and everyone noticed. Then I ran into a spiderweb and thought there was a spider on me. I went through and took my jacket off and was freaking out. I had a dream that britanee haymond invited me to the mormon church. I said yes and jokingly asked if I had to give a speech or share my testimony. She encouraged it so I spent a week writing out what I was going to say. It ended up being 10 pages long. On February 15th, 2017, I took a plunge and moved from Utah to California. I left my family, my friends, and my life that I had built up for more than 20 years. My initial goal was to live with my cousin in San Luis Obispo (SLO), California, for three months. Well, 15 months later, I'm still here! I absolutely love and adore every aspect of SLO. I have been to many restaurants since being here and was asked and approved to write a blog post on "10 Amazing Food Places in San Luis Obispo (SLO), California." And since being new to the city and providing an outsiders perspective and view on new experiences, I figured, why not?
