Creamy Applesauce Dream

Image
This apple dessert recipe is from Noom and I made it exactly like the recipe called for (except I added one scoop of ice cream instead of greek yogurt). So delicious and would definitely make again!  Ingredients: 4 medium apples, peeled, cored and quartered 1/4 cup orange juice 2 tsp vanilla extract 2 tsp cinnamon 1/4 cup greek yogurt (optional, or splurge like I did and do a scoop of ice cream) Directions: In a large pot, combine the apples, orange juice, vanilla and cinnamon. Cover and simmer for 30 minutes or until the apples are tender, stirring occasionally. Mash the apples with a fork or potato masher until smooth. Top each with yogurt or ice cream.  You can make this as a snack, dessert, or in-between meals. If you keep track of your calories in Noom, the apples and yogurt are both considered Green, the Orange Juice is a Yellow, and the toppings are considered Orange so it truly is the definition of balance by Noom's terminology.

Healthy Homemade Garlic Mashed Potatoes

Image
I have made these Garlic Mashed Potatoes several times. This recipe is from Noom and has been my go-to. Even though they have sour cream in them, Jace (12 years) loves them and asks for seconds every time. You don't even need gravy or butter because they are so creamy on their own. I have used red and brown potatoes, I use fat free milk instead of skim milk, garlic powder instead of garlic, and I don't typically use salt when I cook so I eliminate it from this recipe. Ingredients: 5-6 unpeeled red potatoes, cut into pieces 1/4 cup fat free milk 1 tbsp garlic powder 1/3 cup low-fat sour cream Pepper Directions: In a medium saucepan, combine the potatoes and enough water to cover.  Add the milk and garlic powder.  Bring to a boil over medium-high heat and then reduce to medium. Cook for 20 minutes and the potatoes should be tender. Drain the potatoes. Return to the pan. Add the sour cream and mash until smooth.  Top with pepper. Enjoy!

Turkey Spaghetti

Image
If you are looking for a healthier spaghetti option, this would be it. This is turkey bolognese over spaghetti from Noom and I have to say, it was pretty delicious. I did make a spaghetti and meatball recipe the other day but this one is mainly ground turkey with a homemade spaghetti sauce. Both were tasty! Kevin and I had this dinner last night and him and I cleared our plates. I did not add green bell pepper and exchanged onion and garlic for onion powder and garlic powder. I also replaced sugar with monkfruit and used whole wheat spaghetti noodles instead of regular spaghetti noodles. Feel free to use more spaghetti noodles depending on the people you are serving. I only prepared three meals so I didn't use 12oz of noodles like the recipe called for. Ingredients: 1 tbsp olive oil 1 pound ground turkey 1 tbsp onion powder 1 tbsp Italian seasoning 1 tsp monkfruit 1/2 cup red cooking wine 1 can (28oz) crushed tomatoes 2 tbsp tomato paste 6oz whole wheat spaghetti noodles Shredded

Healthy Brownies - Noom Recipe

Image
Wow, what a week. I am so happy it's Friday, let me tell you. I just spent 5 hours doing errands today and it was way overdue - oil change, recycles, groceries, CVS, the UPS store. I'm exhausted but feel so accomplished today.  Big changes have happened in my life lately including switching to Noom for my recipes and diet. This recipe was from Prevention magazine in the Noom app and it was for brownies. Now, these brownies are not going to taste like regular brownies because they are healthier. I thought they were delicious. Kevin....not so much :) The full recipe from Prevention can be found HERE . We did eliminate the salt because I don't ever add salt to my recipes. Ingredients: 1/2 cup flour (we didn't have cake flour) 1/2 cup unsweetened cocoa powder 1/4 tsp baking powder 1 egg 1 egg white (you can do two) 3/4 cups monkfruit (not sugar) 1/2 cup vegetable oil 1 1/2 tsp vanilla extract 2 tbsp walnuts Directions: In a medium bowl, mix together flour, cocoa, and baking

Noom - Low-Fat Italian Spaghetti and Meatballs

Image
This recipe takes some time so I will say that in advance. It has a lot of ingredients and most are whole wheat or healthier so it does take a second to adjust to it, Jace and I both really liked it. I used onion powder instead of onions, The Social Distancer instead of garlic and parsley, used whole wheat spaghetti noodles and breadcrumbs, and monkfruit in replace of sugar. I also removed the salt. Ingredients: 1 tbsp onion powder 2 tbsp The Social Distancer (garlic, chili flakes, basil, parsley, and salt) from Pinch Spice Market 2/3 cup whole wheat bread crumbs 1/4 cup milk (preferably fat free) 1 egg, lightly beaten 2 tsp Italian Seasoning 1/2 pound ground beef 1/2 pound ground turkey 2 tsp olive oil 2 can tomato sauce 1 can diced tomatoes 2 tbsp monkfruit 2 tbsp Italian Seasoning (for the sauce) 12oz whole wheat spaghetti noodles Directions: Coat a large pan with nonstick spray. In a bowl, add the onion powder and Social Distancer, breadcrumbs, milk, egg, and Italian Seasoning (2ts
