Homemade Italian Meatballs

Is anyone else obsessed with "90 Day Fiancee" or just me?  I watch every season basically and I am such a sucker for reality shows. I have a DVR so I always record the Friday night and Sunday night episodes and I just finished the Tell All. So obsessed. Anyways....back to the actual reason why I'm writing, and it's for another recipe of course! This recipe was delicious. I made these Homemade Italian Meatballs and then had a side of spaghetti pasta noodles and spaghetti sauce. Jace used Alfredo Sauce instead of spaghetti sauce. I didn't didn't make this as a spaghetti, I did them all separate for the reason of being able to add the type of sauce wanted/needed. Serve with garlic bread. The original recipe can be found HERE from NW Kidney. This recipe has a secret/different ingredient in it which would be Old Fashioned Oats. This would be instead of a breadcrumbs. You will be surprised on how great they tasted. Jace saw the oats and asked if they were almonds.

Baked Bacon Meatballs - Appetizer

This recipe was actually perfect for the Superbowl but seeing as how it's almost a week late, I figured I may as well share it for other events or next years Superbowl even. You can really use this as an appetizer for any holiday or meal. The original recipe used whiskey in the recipe. I didn't want to do that so I just made it my own below. If you make these, please let me know if you like them. I really, really loved them! Ingredients for the meatballs: 6 pieces of cooked bacon 2 tsp onion powder 2 tsp garlic powder 1.5 pounds ground beef 1/3 cup breadcrumbs 2 tsp parsley 1/4 cup half and half 2 tsp smoked paprika 1 tsp chili powder 1 tsp salt Ingredients for the sauce: 1 cup BBQ sauce 1/4 cup brown sugar 1/4 tsp crushed red pepper chopped chives to top Directions: Cook bacon on the stove.  Use a potato masher to crush cooked bacon. In a bowl, combine the bacon bits, onion powder and garlic powder. Mix in the ground beef, breadcrumbs, parsley, half and half, and seasonings. 

Skillet Turkey Enchilada Meatballs

Happy Halloween! I hope everyone has a fun and safe Halloween. I wanted to share a recipe while I had some time. Last night I made these Turkey Enchilada Meatballs on a cast-iron skillet. I had mine with some toast and Kevin had his with spaghetti noodles. I removed three of the ingredients and changed three of the ingredients. The original recipe comes from Recipe Runner .  Ingredients: 1 pound ground turkey 2 tbsp onion powder 1/4 cup panko breadcrumbs 1 egg 2 tbsp chopped cilantro 1/2 tsp chili powder Salt and pepper to taste 2 cups enchilada sauce 1/2 cup shredded Garlic Jack cheese 1/4 cup shredded sharp cheddar cheese Directions: Preheat oven to broil. In a large bowl, whisk together the onion powder, panko, egg, cilantro, chili powder, salt, and pepper.  Add in the ground turkey and use your hands to combine everything together. Heat a 12 inch cast iron skillet over medium-high heat. Coat with cooking spray or vegetable oil. Use your hands or a cookie scoop to form tablespoon si

Healthier Swedish Meatballs

Is anyone else so excited that Monday is a holiday? I love what I do but it is nice to have a little break and, every once in awhile, a 3-day weekend. I have two blogs to catch up on and hopefully I'll be able to get both completed this weekend. On a happier note, it is Valentine's Day so I hope everyone has an amazing and special Valentine's Day! Kevin and I went to the casino last week so that was our early Valentine's time together. We may take Jace to go see the new Sonic movie - he has been talking about this movie for months! What are your Valentine's Day plans? A few nights ago I made delicious healthier Swedish Meatballs. I used Ground Turkey and Ground Beef as well as seasonings, egg, and breadcrumbs. I didn't have the noodles that you normally use so I just made Shells and it worked perfectly. The sauce was beef broth and cream cheese and who knew that combining those together would make an amazing and delicious sauce! Ingredients: 2 Tbsp olive
