Meatballs Subs

Last night we decided on Meatball Subs. The original recipe can be found HERE from AllRecipes . We made a few slight changes. Although messy, this is definitely one of my top favorite meals. I also made another Instagram Reel video of the subs that you can see here -  https://www.instagram.com/p/CJDEd4sgJ7s/ Ingredients: 1 pound ground beef 3/4 cup Italian breadcrumbs 2 tsp Italian Seasoning 2 tbsp minced garlic 2 tbsp dried parsley 2 tbsp Parmesan cheese 1 egg 1 sourdough french baguette 1 tbsp oil 1 tbsp garlic powder 1 jar spaghetti sauce 3 slices provolone cheese Directions: Spray a baking sheet with PAM or cooking spray. In a medium bowl, mix by hand the ground beef, bread crumbs, Italian seasoning, minced garlic, parsley, Parmesan cheese, and the egg.  Shape into 12 meatballs and place on the baking tray.  Heat oven to 350 degrees. **Warning: These are SUPER messy but SUPER delicious** Yesterday I made this Meatball Casserole and turned it into Subs and it was a HIT you guys! They turned out amazing. So I used the Meatball Casserole recipe from Joy Filled Eats and we made it our own and then turned the bake into subs. The recipe calls for Ground Turkey and Italian Sausage but we couldn't find any nearby so we just used Ground Beef. We also used more marinara sauce and instead of dried minced onion and garlic we used onion and garlic powder. We also eliminated the zucchini. See our version below. I apologize ahead of time that the last two blog posts have been full of carbs. I'm supposed to be on a low-carb diet but sometimes things just come up and you have to eat the carbs. I am very proud to say that as of this morning, I am down 9.3 pounds since the end of June! And I maintained my weight throughout Thanksgiving so I think, overall, I'm on a better track. A few nights ago I made these Homemade Meatball Subs. Initially, I did look for a Low Carb recipe, but they seemed like way too much work. I worked for five hours, had an hour doctor appointment and just wanted to make dinner as quickly as possible. Well, this recipe wasn't "quick" per-se but it would have taken way more time to make the Low Carb version. The recipe we pulled from was AllRecipes HERE . We created our own below. I received the Cravings 2 recipe book from my boyfriend this Christmas and have already enjoyed several recipes including this one! The Cheesy-knife-and-fork Meatball subs were REALLY good but I have to say it probably took 1.5-2 hours to prepare everything, especially since the sauce is made-from-scratch! Everything is so good and we made enough for four servings. Just make sure you plan ahead of time to have time to make everything! Once again, we did change just a few things but overall it was pretty dang amazing!
