Cheesy Baked Burritos with Enchilada Sauce

It has been awhile since I have  made a blog post about food. There are a few reasons for that. I am either cooking normal food (haha) and nothing outrageously worth writing a blog over, I have been working more which equals less blogging time, and, starting now, I am really wanting to start eating healthier. We all say that though, right? Sometimes we just have to eat the carbs. We made this recipe last night, it was a little messy but pretty delicious. It doesn't help that I accidentally bought HOT Enchilada Sauce instead of Mild so my mouth was burning almost the entire time. Jace said this was the best food I ever made but then only ate a quarter of his burrito because it was too hot. Kevin is the only one who loves the heat. Marinated Chicken and Potatoes in the Cast-Iron Skillet

If you have one day to prepare and marinade the chicken, I would strongly recommend this recipe by Eat Well 101 . We made ours a little bit different but overall, it was tasty. Everything tastes better in a cast iron skillet though, doesn't it? Also, I loved that I didn't feel gross after I ate because it was a fairly healthy meal. It took about 30 minutes for me to make once the chicken was done marinading. I let the chicken marinade for about 24 hours. Ingredients for the marinade: 1 1/2 pound chicken breast (boneless, skinless) cut into strips 1 tablespoon olive oil 1/4 cup soy sauce 1 tablespoon hot sauce (we also balanced out the heat with some Mild packets from Taco Bell) Pepper Directions for the marinade: Using a cutting board, cut the chicken breast into strips. Oh.My.Gosh. I swear the recipes keep getting better and better. These were SO good. Words cannot describe. We had them for dinner tonight with the Ranch drizzle on top. The original recipe was from Delish and can be found HERE . We made this recipe our own and changed a few things. Our recipe is below. Ingredients: 2 1/2 cups shredded chicken 3 Taco Bell Hot Sauce packets 4 tsp Ranch Seasoning Mix (plus some when you cook the chicken. I put our chicken in the crockpot with ranch seasoning mix and beef broth for 2.5 hours before making this so I could shred it) 5 tablespoons melted butter 1 tube biscuit dough Mozzarella cheese Basil (seasoning) Ranch dressing (for drizzling at the end) Directions: Preheat oven to 375 and spray a baking sheet. In a large bowl combine the chicken, hot sauce, ranch seasoning mix, and melted butter. Flatten each biscuit, place chicken mixture in the middle followed by mozzarella cheese. Mississippi Mud Potatoes

Have you ever heard of Mississippi Mud Potatoes? I hadn't until Kevin sent me THIS RECIPE last week. All you really need to know is 3 ingredients - potatoes, cheese, and bacon. AKA all of the best food and carbs. Those are the most important ingredients. This recipe was super easy to make. The original recipe called for green onions. It also was made 8 servings. We made ours for three people and no green onions. Super good! And filled us up. Ingredients: 4 cups potatoes, diced finely 16oz cheddar cheese, shredded 1 cup mayonnaise 1 package bacon, cooked and torn into pieces Directions: In a large bowl, mix potatoes, cheese, and bacon. Stir in mayonnaise (don't worry, you won't taste it!). Bake at 325 for 45 minutes. Top with additional cheese if desired.

Four Cheese Penne Pasta Bake

I have to say that I have never been a huge fan of Penne Pasta. But if you pair it with cheese and sausage, I'm all in! This Four Cheese Pasta Bake was so heavenly! The original recipe can be found HERE . Our new version is below. Enjoy! Ingredients: 1 pound Penne Pasta 3/4 pound Smoked Sausage Crushed Red Pepper Onion Powder Vegetable Oil 1 jar (24 ounces) marinara sauce 1/2 of a small bag of four-cheese blend Directions: Heat oven to 450 degrees. Cook pasta according to package directions and drain. While cooking pasta, cut sausage into 1/2 inch slices. If you have a large pan or skillet, you can use that for the sausage and sauce. Pour olive oil in pan and add the sausage. We had random Crushed Red Pepper packets and I poured two on the sausage. You can also used Crushed Red Pepper seasoning. I also added a few tablespoons of Onion Powder but feel free to use as much as you want. Cook the sausage until it's done. Add the Marinara sauce and bring to a simme

Easy and Delicious Sloppy Joe's

Whenever I think of Sloppy Joe's I think of my childhood. I can't remember if it was church camp where we had them or just a part of our weekly family dinners at home (or maybe both) but they bring back a lot of great memories. Kevin sent me a recipe on Friday and *thankfully* I had all of the ingredients already at home except the meat. This recipe was actually shorter than what it said and the Sloppy Joe's turned out really really good. In fact, in the original recipe HERE , some of the comments stated that this was the best Sloppy Joe recipe they have made :) We added a few extra spices in it so feel free to customize to your liking :) Ingredients: 1 pound ground beef 1 cup ketchup 1/4 cup water 2 tablespoons brown sugar 2 teaspoons Worcestershire sauce 2 teaspoons mustard 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon salt 2 tablespoons chili powder 1 tablespoon paprika 4 hamburger buns Directions: In a large saucepan, cook bee
