Easy Potato Kielbasa Soup

The very first food blog post I ever wrote was an Easy Potato Soup in the Crockpot  and, as of today, with 256,602 views, it's hard hard to beat with another potato soup recipe but LET ME TELL YOU. This one I made a few nights ago, and yes, it's summer, and in the triple digits (to be fair, it was on a day that it did rain a little bit), but it was soooo FLAVORFUL.  Like if Guy Fieri could try this recipe, I know he would have so many descriptive words:) This recipe was pulled from Momy Cooks and it was for a Cozy Potato Kielbasa Soup recipe. This was more than just a comfort food. I was SHOCKED with how flavorful this was. The celery seed was actually the perfect addition and that stood out the most to me. I love using Turkey Kielbasa as a healthier option and I typically use a broth that is low or reduced sodium. You can make this soup on a rainy, winter day, or like I did, in the summer with the A/C on inside the house. It looks like a lot of work but this one was SO worth

As I mentioned in my previous blog, I was supposed to write this one a few days ago as well but things have been so crazy busy that I barely have time for blogging anymore. This weekend Kevin and I were able to take a drive down to Santa Cruz together which was a nice experience because 1. We never go on dates anymore - just us and 2. We have never been to Santa Cruz together. The last time I was there was when my Dad was alive (20+ years ago) and Nana and Papa were there too. We went to the Santa Cruz boardwalk and I have so many memories and fun times there. My very first food blog EVER was an Easy Potato Soup recipe HERE using frozen hash browns, bacon bits and other ingredients. I never knew that making that specific recipe would lead to 139,301 views! YES you read that number correctly! That recipe was the starting point to turning my blog into a food blog. Yesterday was 65-70 degrees (not even kidding - and for mid-February this is crazy!) and I don't necessarily like making soup or warm soup on hot days but we had some potatoes that were days away from going bad so I thought a crockpot recipe would be easy. Plus we saw the Sonic movie earlier that day with Jace so I wasn't in the mood to cook this huge meal. I took that exact recipe from almost two years ago and used real potatoes and real bacon instead. With Fall quickly approaching, what better way to feel comfort than an easy potato soup in the crockpot. This is not at all a healthy soup but it is a quick soup for those busy weekdays or cool, crisp weekends. This cozy soup is perfect for Fall and Winter seasons. With frozen hash browns, bacon bits, cheese, and cream of chicken soup, how can you go wrong? I did adjust some measurements and made some recommendations. Here is what I did for my Easy Potato Soup. Ingredients: 1 30oz. bag of frozen diced hash browns 1 32 oz. box of chicken broth 1 22 oz. can of cream of chicken soup 3 oz. of bacon bits 1 8oz package of cream cheese cheddar cheese (to sprinkle on top) pepper Turn crockpot on to low and add hash browns.
