Jamaican Jerk chicken

Well I thought I took more photos of the Jamaican Jerk Chicken but I guess I only have a few of the final product. This is another recipe from DaVita which is our new favorite for kidney-friendly recipes. We let this marinade overnight. We replaced onion with onion powder, garlic cloves with garlic powder, we did not use a chili pepper or habanero, and didn't use green onions. We also used ground ginger in place of fresh ginger. It turned out really really good as we baked it and then broiled it. The DaVita recipe calls for grilling but we decided to bake instead. We served ours with white rice and macaroni and cheese - although a kidney doctor/dietician recommended jasmyne rice instead of white rice so we tend to eat jasmyne rice when we can. Because I didn't add any chili peppers or anything spicy, it was more on the sweet side but still had a good balance. Would make this again!  Ingredients:  1 tbsp onion powder 2 tsp ground ginger 1 tbsp garlic powder 2 tbsp white vinegar

Davita Chicken Pesto Pizza

If you are looking for a unique, flavorful, healthy homemade pizza, this is for sure it. The original recipe is from Davita (our favorite) and can be found HERE . I bought a pizza dough from Albertsons, didn't use bell peppers, used onion powder instead of red onion, and eliminated the chives. We also added Italian seasoning and That's Amore. This recipe uses a grill but I baked ours in the oven since we didn't have a grill. Ingredients: 1 pizza dough 2 tbsp onion powder Sun-dried tomato pesto 2 tbsp olive oil 1 cup shredded chicken 1/3 cup grated Romano cheese 1/4 cup mozzarella cheese 2 tbsp Italian seasoning  2 tbsp That's Amore seasoning by Pinch Spice Market Directions: Spread the pizza dough out on a flour surface. I used a cutting board and rolled it out with a rolling pin. Add the sun-dried tomato pesto as your base. Leave about 1 inch on all sides. Chicken Enchilada Tacos Recipe

For those who don't know, I have a small glitter tumbler business that I started in February of this year. I received a custom order of eight tumblers that I am going to customize. I was supposed to receive 12 tumblers last night from Amazon and my order is running late :( I was going to spend all day making tumblers but, instead, you guys get a recipe :)  This recipe is actually kind of funny because my plan last night was to make shredded chicken enchiladas (and since today is Mexican Independence Day and I'm partially Hispanic, this recipe totally makes sense) but it turned into shredded chicken tacos. Since Kevin, Jace and I are really trying to eat better, a lot of our recipes are from Davita and this recipe was no different. This is a crockpot recipe and it contains a homemade enchilada sauce.
