Slow Cooker Steak Fajitas

Yesterday, again with it being Cinco de "Mario", I had to make some Mexican food, right? So I made Slow Cooker Steak Fajitas with Sirloin Steak. The original recipe can be found from Taste of Home HERE and we made this our own below.  Ingredients: 1.25 pound Top Sirloin Steak 1 medium red pepper, cut into strips 2 tbsp onion powder .87oz packet of fajita seasoning mix 1/2 cup beef broth 8 tortillas 6 tbsp pico de gallo Directions: Place the steak, red pepper, onion powder, and fajita seasoning mix in the slow cooker.  Pour the beef broth on top and cook, covered, on low about 6-6.5 hours. Remote from slow cooker and let sit about five minutes. Cut into slices, against the grain. Serve in tortillas with pico de gallo, sour cream and cheese if you would like. The meat will be tender so you can also shred it if you would like but I just cut in slices and put in tortillas. Enjoy! 

Blue Caribbean Margarita

Yesterday was Cinco de Mayo, or Cinco de "Mario" as we like to call it. May 5th is my Dad's birthday but he unfortunately passed away in 2003. This holiday is usually a celebration of his life combined with any excuse to have Mexican food. 😛 I'm definitely no bartender and only drink maybe once every 3-4 months so this was in no way, shape or form fancy. In fact, I just used regular cups and a blender. This recipe was super easy to make and delicious. We ran out of lime juice so we used the peaches with syrup in it and it was so good you guys. Anyways, I did an Instagram Reel HERE so you can see the video. And yes, I also used a medicine cup for measurements and a coffee cup for my margarita. The original recipe is from Taste of Home HERE .  Ingredients: Sugar for rim 1.5 oz Blanco Tequila 1 oz Blue Curacao 1/2 oz lime juice Directions: Moisten rim of cup with lime juice. Sprinkle sugar on a plate and dip rim in sugar.  In a blender, combine tequila, curacao and lim
