Mini Baked Chicken Tacos

What a week! Yesterday I went to the doctor who told me that he is sure I have pneumonia, he gave me four medications and luckily the chest X-rays came back normal. This morning I went and picked Jace up from his Nana who had him for two weeks. Jace cried and cried and cried, he had so much fun in Arizona and misses his Nana so so much already.  I have thousands of emails to catch up on but decided instead to write a blog because I have another delicious recipe to share. A few nights ago I made these Baked Chicken Tacos from Alese  (who makes amazing recipes by the way) and these were super easy to make. I have never baked tacos using an upside down muffin tin, but what a perfect way to make them! I love mini tacos because they are filling, but easy to eat, and not too messy. Baked tacos were perfect for these - it was like a chicken caesar salad in a taco - a very unique twist. The last two days I have woken up about an hour and a half before I needed to which is rather different for me but there has been a lot on my mind. Between moving in 30 days, finding out where to move to, applying, packing, homeschooling, and working, life has been nothing short of stressful. We put our 30 day notice in today, we are almost done applying for an apartment in Hesperia, and I still have a full list of things that have to get done. Being in quarantine doesn't help, wearing masks everywhere we go is the new normal.Yesterday was probably the worst for me. I haven't been that stressed out in a very long time. Baked Chicken Tacos

The original recipe was for Spicy Baked Chicken Tacos that can be found HERE . We actually changed the original recipe up quite a bit and I'm a little embarrassed to say this but I had three of these tacos in one sitting. They were SO good. I would say this was one of my favorite recipes I have made to-date.                                               Normally when I have regular tacos, I use beef and I will either not bake the taco shells or bake them once. This one we baked twice (once just the shells and the second time with everything in it) which made it SO much better! Please leave your comments, recommendations, or changes below!
