Muffin Tin Chicken Pot Pies

Good morning and happy Tuesday! I hope everyone had a nice Labor Day weekend. I know I did! I woke up this morning to a nice giveaway win, but I also woke up to Kevin having COVID :( It's been one of those weeks...or maybe years, I don't know. I'm still recovering from COVID (I had it in July) but I am feeling better day by day. A few nights ago I had some energy so I made these Muffin Chicken Pot Pies. They are actually fairly easy to make and they were SO good. They were the perfect size too. I could have probably been fine eating one, but I did eat two, they were that good:) This recipe is from Taryn Newton on Facebook . I used boiled chicken breast, shredded, instead of Rotisserie Chicken and eliminated salt. Super good, crispy biscuit, soft inside, and a great combination of flavors. Homemade Chicken Pot Pie

Last night we made this homemade chicken pot pie. I know, I know, not healthy, but every once in awhile you just have to prepare a good, delicious meal full of carbs :) Also, I don't think I've ever made my own pot pie or even a pie in general. I have helped but not actually made one from scratch on my own. I was very nervous on how it would turn out but as long as you follow the instructions, you should be good :) The adults each had two slices and Jace had one so we ate almost the entire thing in one night. It was SO good and the smell was amazing. I say every recipe is good, but only the good ones get a blog ;) Anyways, just a few things before we start. Before I share this recipe, I have a really funny and cute story that I have to share. I told Jace, my 7-year old stepson, that I was making Chicken Pot Pie for dinner. The first thing he asked was, "Like the red rice and beans? And chicken wings?" He totally thought I said "Popeyes"! Now I can't say that this recipe beats Popeyes but it is super good! Ingredients: onion powder 1.5 cups chopped carrots fresh parsley leaves 1 teaspoon dried oregano 1 teaspoon paprika 1 teaspoon salt 1 teaspoon pepper 1 cup chicken broth 22oz cream of chicken condensed soup 2 boneless skinless chicken breasts 1.5 cups frozen peas 15oz can of corn 1 can biscuits, baked Directions: Layer onion powder, parsley leaves, oregano, paprika, salt, and pepper in the bottom of the crockpot.
