Easy Chicken Fried Rice

As promised, here is another healthier recipe that was fairly easy to make. This recipe is from Fresenius Kidney Care and can be found HERE . The original recipe did not have chicken so we added that. We did not use scallions and used ground ginger and garlic powder instead of fresh ginger and minced garlic. I thought this was so good and would highly recommend! 5-Stars from my family!  Ingredients: 3 tbsp vegetable oil 2 large eggs, beaten 2 tsp ground ginger 2 tsp garlic powder 2 cups (or one bag) frozen vegetables (thawed) 2 cups cooked brown rice 2 1/2 tbsp reduced sodium soy sauce 1 large chicken breast, cut into chunks Directions: Start with making the chicken first. Use 1 tbsp of vegetable oil and let it sit in a wok or skillet for a few minutes to get hot.
