Hibachi Chicken Fried Rice

One final Sunday recipe - Hibachi Chicken Fried Rice. This was an amazing Fried Rice recipe . We added chicken, eliminated green onion, used less olive oil and used garlic powder in place of garlic. If you are looking for a fairly easy meal that is delicious, this is the one for you!  Ingredients: Boneless, skinless chicken breast, cut into pieces 2 large eggs, beaten 2 tbsp olive oil 1 tbsp garlic powder 2 cups cooked white rice 3 tbsp organic soy sauce Directions: Heat a wok or pan over medium-high heat. Add 1 tbsp olive oil. Add chicken pieces and stir fry 5-7 minutes or until cooked and no longer pink. Move to a plate.  Add 1 tbsp olive oil and add eggs. Cook and stir eggs until cooked through, 1-2 minutes (or less).  Add chicken back in as well as garlic powder.  Mix in cooked rice and cook until 1-2 more minutes. Add soy sauce until rice mixture is evenly coated, about 3 minutes. Enjoy!

Easy Chicken Fried Rice

As promised, here is another healthier recipe that was fairly easy to make. This recipe is from Fresenius Kidney Care and can be found HERE . The original recipe did not have chicken so we added that. We did not use scallions and used ground ginger and garlic powder instead of fresh ginger and minced garlic. I thought this was so good and would highly recommend! 5-Stars from my family!  Ingredients: 3 tbsp vegetable oil 2 large eggs, beaten 2 tsp ground ginger 2 tsp garlic powder 2 cups (or one bag) frozen vegetables (thawed) 2 cups cooked brown rice 2 1/2 tbsp reduced sodium soy sauce 1 large chicken breast, cut into chunks Directions: Start with making the chicken first. Use 1 tbsp of vegetable oil and let it sit in a wok or skillet for a few minutes to get hot. With Thanksgiving a week away in an era of COVID, I'm just curious - what are all of your Thanksgiving plans? Kevin and I are going to have our first Thanksgiving together, just him and I! Jace will be in Vegas with his Nana and they will be seeing his Uncle out there so it'll just be the two of us. We have a huge menu planned out so hopefully I can share some Thanksgiving recipes with you guys. I also have off next Wednesday, Thursday, Friday, Saturday and Sunday! I think Wednesday and Thursday will just be cooking days. Today I am hoping to provide you guys with two recipes - Chicken Fried Rice and a Penne Meatball Bake. The Perfect Chicken and Shrimp Fried Rice Recipe

A few nights ago my boyfriend made the most AMAZING Chicken and Shrimp Fried Rice. It wasn't too salty and I actually don't like shrimp but they were the jumbo pieces so I could easily take them out without tasting the shrimp flavor. The recipe we based ours off of is HERE but we made our own below. Ingredients: 14 jumbo shrimp 2 chicken breasts 1/2 teaspoon kosher salt freshly ground pepper extra virgin olive oil 3 eggs, beaten 4 cups rice 1/2 of a bag of frozen peas and carrots 2 tablespoons soy sauce 1 teaspoon sesame oil Directions: Cook chicken until done. In a separate pan, toss shrimp in olive oil and sear shrimp on both sides (or until orange). Cook eggs separately and scramble. Put rice in separate pan and add everything in pan (shrimp, chicken, vegetables, soy sauce, sesame oil, salt, pepper, and eggs). Heat everything until sizzling hot and add more soy sauce to taste.
