Chicken Bacon Ranch Casserole Bake

Holy moly. This casserole bake was so good. There was a light ranch taste so it wasn't overpowering. It was creamy and the bacon crumbles were so good. This casserole dish took for-ever to make but SO worth it. Jace ate a whole plateful, I did as well and Kevin took some to work today. The original recipe was from Southern Living HERE . We changed our recipe a little bit - using Shells instead of Penne, making our own Ranch Dressing seasoning, using Basil instead of Parsley and Garlic Powder instead of Minced Garlic. Ingredients: 8oz pasta shells, cooked 4 bacon slices, chopped and crumbled 1 Tbsp garlic powder 3/4 cup heavy whipping cream 8oz cream cheese 3oz parmesan cheese, shredded 2 Tbsp ranch dressing 1 Tbsp ranch dressing seasoning (homemade or store bought) pepper 3 chicken breasts, cooked and shredded 2 cups mozzarella cheese PAM cooking spray 2 shakes of Basil Directions: Preheat oven to 375. Cook shells according to directions. Drain and reserve

Easy Shredded Chicken Casserole Bake

Has anyone else experienced a weird week this week? I thought with it being a holiday weekend, things would be okay still but I barely know what day it is. Yesterday I worked 10 hours, today I worked 5 and then went to the gym. It's been quite the past few days. Luckily on Sunday I was able to prepare our meals for the week so even with my chaotic schedule, I'm still able to cook :) A few nights ago I made this Shredded Chicken Casserole Bake. It was SUPER easy and SUPER good. Jace loved it and had seconds. Next time I will use what the initial recipe called for - 8oz of cream cheese instead of 4 (all I had). The original recipe that I pulled from can be found HERE . We didn't add the green chilis that the original recipe called for. Crack Chicken Casserole - Easy and Low Carb!

As promised, here is the second chicken casserole recipe. Out of the two, this one was my favorite. It is called Crack Chicken and it's literally that. I ate like half the casserole myself :/ So delicious, so addicting, so good, and low carb! The original recipe can be found HERE  but we added our own adapted recipe below. Ingredients: -2 boneless skinless chicken breasts, chopped and cooked -1/2 pound bacon, chopped and cooked -1 cup shredded cheese -3 eggs -1/2 cup heavy whipping cream -1/2 cup ranch dressing Directions: Preheat oven to 350 degrees. Spray a casserole pan. Spread chicken and bacon in bottom of pan. Top with shredded cheese. Whisk together eggs, heavy cream, and ranch dressing. Pour on chicken mixture. Bake uncovered for 32 minutes. Enjoy (but not too much!) 

Salsa Verde Chicken Casserole

I've had Salsa Verde Before but never in a Chicken Casserole form. It was pretty good! This recipe called for Cream Cheese which is different than how I normally make it. The original recipe was found HERE . Our changes are below. Ingredients: 4 medium boneless skinless chicken breasts 8 oz cream cheese, softened 1 cup salsa verde Mozzarella cheese (almost one bag) The Marinade: Garlic Powder 1 tablespoon Olive Oil Red Pepper Flakes 1/2 teaspoon Italian seasoning Pepper Directions: Add olive oil, garlic powder, Italian seasoning, pepper, and red pepper flakes in a ziploc bag. Seal the bag and shake until mixed. I didn't measure the garlic powder, red pepper flakes or pepper. I just put some in the tab and mixed it until it was good. Add the chicken breast, seal, and massage so the chicken is covered in the marinade. Turn the oven on to 400 degrees. Arrange the chicken breasts in a baking dish. Spread the cream cheese over the chicken and season with pepper
