Healthy Beef and Broccoli with White Rice

The The night I got home from Utah called for a delicious homemade Healthy Beef and Broccoli with White Rice meal. I love cooking and missed it so much while I was gone. It's also been nice to eat healthier since I've been home this week. This recipe was pretty easy to make and was another one from Davita that can be found HERE . I did not use garlic cloves, a tomato or peanut oil. I replaced the garlic cloves with garlic powder and used sesame oil instead of peanut oil. Ingredients: 2 tbsp Wine Smoked Garlic from The Salt Smith 8oz sirloin beef, uncooked 12oz frozen broccoli 2 tbsp sesame oil 1/4 cup low sodium chicken broth 1 tbsp cornstarch 2 tbsp low sodium soy sauce 2 cups white rice Directions: The original recipe calls for thawing out the frozen broccoli in the microwave but I ended up using a wok for both the beef and broccoli. I used the sesame oil and garlic and let it heat up for about a minute. I added the broccoli and cooked about 3-5 minutes until soft. I removed

Easy Beef and Broccoli

Last night's dinner was Beef and Broccoli - a little bit on the healthier side compared to some of the other meals we have had. I'm starting to make better meal choices for Kevin and I both. Tonight we are making Taco Soup and then tomorrow we will make a spaghetti with ground turkey. Sometimes it's just the littlest and smallest changes that make the biggest impact. I didn't take a lot of photos of this meal because I took video instead to make an Instagram Reel which you can see HERE . Jace helped make it and he loves helping with dinner! We used Olive Oil instead of Vegetable Oil, used half the broccoli the recipe asked for, didn't use any chili garlic sauce, and used onion powder instead of onions. As I'm writing this, it is pouring rain outside. Like pouring rain and flooding. I love the rain but unfortunately it is super rare for Central California. We only get rain around January/February for the most part and barely above being in a drought. I love the sound of rain, having a fire going while it's raining outside and just staying in comfy jammies while inside. I'm so glad I have nothing on my schedule today that involves leaving my house :)  Last night I made this Beef and Broccoli recipe. If you like foods on the saltier side, this one is for you. I'm not a huge fan of salty foods but I did clean my plate on this one. If you want, you can either add less soy sauce or lime juice to offset the salty taste. Slow Cooker Sirloin Steak with White Rice

Tonight's dinner was slow cooker Sirloin Steak mixed with soy sauce and other sauces and originated HERE . The original recipe called for mixing broccoli with it which I did not do. I also ended up picking up sirloin steak that had a lot of fat on it so I only ended up with about half of what I expected :( It was still good though and was super easy to make. Ingredients: Sirloin steak sliced into small chunks/bites (I had two pieces but only ended up with one) 1 cup beef stock 1/2 cup soy sauce 1/4 cup brown sugar 1 tablespoon sesame oil garlic powder white rice and butter Directions: In the crockpot, mix beef broth, soy sauce, sesame oil, a thin layer of garlic powder and brown sugar. Add the sirloin steak and cook for four hours. I kept on warm for about an hour before serving. I purchased the 90 second white rice and mixed with butter and then added the steak and sauce on top of the rice. Super delicious! Enjoy!
