Skillet Turkey Enchilada Meatballs
Happy Halloween! I hope everyone has a fun and safe Halloween. I wanted to share a recipe while I had some time. Last night I made these Turkey Enchilada Meatballs on a cast-iron skillet. I had mine with some toast and Kevin had his with spaghetti noodles. I removed three of the ingredients and changed three of the ingredients. The original recipe comes from Recipe Runner . Ingredients: 1 pound ground turkey 2 tbsp onion powder 1/4 cup panko breadcrumbs 1 egg 2 tbsp chopped cilantro 1/2 tsp chili powder Salt and pepper to taste 2 cups enchilada sauce 1/2 cup shredded Garlic Jack cheese 1/4 cup shredded sharp cheddar cheese Directions: Preheat oven to broil. In a large bowl, whisk together the onion powder, panko, egg, cilantro, chili powder, salt, and pepper. Add in the ground turkey and use your hands to combine everything together.
