This week is feeling like Fall and I absolutely love it. I'm not looking forward to this weekend where the temperatures plan on going back up to the 90s+. In the meantime, I'm enjoying my nightly walks and spending time in the cooler weather.  Yesterday for breakfast I made these Pumpkin Waffles. Not only do I love pumpkin flavors, but it's a healthy, easy breakfast that filled me up all morning. Making homemade waffles not only made my house smell amazing but it also is much better and more delicious than using a pre-made mix. All of the ingredients are recognizable and it makes me feel like I'm eating a healthy, wholesome meal. One serving made one waffle for me and I topped mine with sugar free syrup and pumpkin pie spice.
