How to Make the Best Pot Roast

Pot Roasts are a super easy meal that you can eat throughout the year. I didn't even realize how many previous blog posts I have made of pot roast until I went to write this one. This recipe that I'm about to share is very simple and all of the flavors come through - you have a ranch and Italian seasoning packet so you can taste the seasoning flavors and then you have a gravy packet which comes through in the thickness and juiciness and then the pot roast itself is so tender and it just falls apart in your mouth. I did add garlic powder, pepper, and onion powder as well as carrots and potatoes. The veggies were a nice addition as they were soft and worked well with the pot roast.  Here are the previous pot roast recipes I have made if you wanted to try different recipes. Happy Halloween! Since we celebrated Halloween on Friday with Jace, I didn't even realize until 10am that it was even Halloween today. Whoops! Also, since it's a Sunday today, I feel like most people celebrated last night anyway. Kevin and I went on a date yesterday which is so nice - especially since I finally have a job so I have some extra money - we went to an escape room which was only our second time doing one and it was really unique and fun! I would highly recommend going to one if you want something different. It was only the two of us so we had to work together to problem solve and think through hints. We also went and conveniently saw Halloween in the movie theater. This was the first time we went to the movies in a theater since before COVID. It's been almost two years which was crazy but it was a really good experience. The movie itself was good (we watched about half of it at home so I was prepared to not be *as* scared) and it was nice to be back in a theater

Pot Roast with Potatoes and Carrots

This is my first recipe in awhile and I'm excited to share it with you guys. This past weekend we went to Las Vegas for my boyfriends brothers wedding and it was gorgeous! Did you know that the 21st floor of The Cosmopolitan hotel has a wrap-around balcony? They had their ceremony right out on the balcony overlooking the Vegas strip. So amazing! Anyways, so the four days there I spent eating fast food every day and drinking a little bit of alcoholic beverages and I came back home and lost 1.3 pounds! You guys HAVE to try this Vegas Diet ;)  Jace is at his Nana's so last night Kevin and I had a late dinner of this Italian Pot Roast with Potatoes and Carrots. We served this with a few pieces of garlic toast and it was such a filling meal. If you make this, please let me know what you think! The original recipe can be found HERE from Rachael Ray. Ours below has less potatoes and carrots, thyme instead of rosemary and garlic powder instead of garlic. We also eliminated mushrooms.
