No Bake Peanut Butter Protein Cookies

This morning I was in the mood for something a little sweet so I made these protein peanut butter no-bake cookies from Madison who swaps out recipes for healthier ones. I love her recipes so check her out! I'll be honest, these are so different than regular peanut butter cookies but with added protein powder, they are made to fill you up between meals or as a post-workout snack. I used no sugar peanut butter instead of regular peanut butter and used healthier replacements such as almond flour, protein powder and coconut sugar. I had 1-2 of these at a time with a glass of milk. Nothing is more nostalgic than cookies and milk:) Ingredients: 1 cup no sugar added peanut butter 3/4 cup almond flour 1/2 cup Vega vanilla protein powder 2 eggs 1/4 cup coconut sugar Directions: Preheat oven to 350 degrees. Add all ingredients to a mixing bowl.  Stir well to combine.  Spray a cookie sheet and scoop cookie dough into 8 balls. Place on baking sheet.  Use a fork to press down on the balls in a
