Beef Enchiladas

Life is all about balance, right? Last night we had Beef Enchiladas - homemade - with a recipe from NW Kidney that can be found HERE . Being a "healthier" recipe, I didn't know what to expect but I was more than surprised on how good these turned out. PLUS, I dropped 1.5 pounds overnight. Although I can't guarantee weight loss, I typically lose weight when I switch over to DaVita or kidney-friendly recipes.  In this recipe I used onion powder in place of an onion and garlic powder in place of garlic. I didn't want to use small corn tortillas because they fall apart so I found some Handmade Style Tortillas that were made from a blend of white and wheat corn. Will definitely buy again! Ingredients: 1 pound ground beef 2 tbsp onion powder 1 tsp cumin Black pepper for taste 1 tbsp garlic powder 6 Handmade Style Tortillas 1 can enchilada sauce 2 tbsp olive oil Four Cheese blend, to top Directions: Brown the meat in a frying pan. Add onion powder, garlic powder, cumin a

I just sat down for the first time today to actually relax. And it's 4pm on a Saturday. Yesterday was my birthday (yay for 36!) so my fiance and I went down south and stayed at a hotel. We had a nice time. I drove home two hours today and then finished up putting resin on some tumblers, I went to the market so I can make more recipes for you guys, wrapped presents for my son because his birthday is next Friday, and then worked for a few minutes. I also received some Amazon orders because, you know, Christmas is in a few weeks, so I went through those as well. Whew, ready for a break. I am so behind on blogs and I am pretty sure I say that in all of my blog posts. I actually have a blog post that I'll be making next about discounts and deals you can receive from companies during your birthday. And my birthday was yesterday so that tells you how behind I am on blogs :/  So I think I made this recipe last week, or maybe the week before and it's for Ground Beef Enchiladas. Kevi

Ground Beef Cheesy Enchiladas with Taco Seasoning

Image
With so many enchilada recipes I have blogged about, I'm surprised that none of them are just regular, ground beef, cheesy enchiladas. So here we go. Ingredients: 1lb ground beef 2.5 cups red enchilada sauce 1 packet taco seasoning 5 large flour tortillas 1 1/2 cups cheddar cheese, shredded Directions: Heat oven to 375 degrees. Spray a pan with PAM or spray. Cook beef on the stove until brown, 5-7 minutes. Add taco seasoning with 3/4 cup water. Boil. Turn heat down and cook for about 2.5 minutes. Add 1 cup enchilada sauce and cook for 2.5 minutes more. In a tortilla, pour the meat mixture in the tortilla and add cheese. Roll tortilla up and place in a pan or baking sheet. Do this for all 5 enchiladas. Pour the remainder enchilada sauce on top and top with more cheese. Cook for 25 minutes. Serve with rice and beans.
