I have been on my computer working on the SEO Hubspot Certification this morning and I'm really enjoying it.  Jace came in this morning and said, "Are you working?" and I said, "I'm just doing a few things" and he said, "I don't want you to work today" so once I'm done with this blog I'm going to hang out with him.  He starts school back up in three days which is so hard for me to believe. Also, the fact that he's going into 8th grade (and still wants to spend time with his mama) completely blows my mind.  Last night I made this Chicken Parm recipe from Clean Food Crush. Although it took awhile to make (it's not the easiest...or the cleanest), everyone wiped their plates clean! Chicken Parm has always been a family favorite (except Jace prefers to add Alfredo sauce to anything over spaghetti sauce). There were a lot of steps to this one but it was well worth it. Today is a good day. It's usually a good day when I don't have anxiety. For those who don't know, most of this month was anxiety-filled and it was not fun. I pushed through and still accomplished a lot but it was really bad for me.  You can read all about it HERE . Since I'm finally feeling better, my days have felt happier and better. This makes cooking more fun and feeling accomplished throughout the day. I have also been spending a lot of the past week watching the Olympics. I have loved the Olympics for years. In fact, I remember when I went to bible college, I remember sitting in the shared living room and watching the Olympics with a bunch of people on this tiny TV. My Dad, when he was alive and when the Olympics were in Utah, actually went to the Olympics and worked the Olympics as a firefighter/paramedic which was awesome. I think that was in 2002. OK you guys, I'm a little more prepared in this blog and came up with more than just one photo. I haven't had Chicken Parmesan in so long and we ended up using this recipe  HERE . These are fried AND baked these and they turned out SO good! The full directions are below, enjoy!  Ingredients for the Chicken: 2 chicken breasts, cut horizontally, so 4 total pieces 1 cup buttermilk 1 tsp salt 1/4 tsp cayenne pepper 1/4 tsp garlic powder 1/4 tsp paprika Ingredients for the breaded topping: 1 1/2 cups flour 1 1/2 tsp baking powder 1 tsp salt 3/4 tsp pepper 3/4 tsp garlic powder 3/4 tsp paprika 3 tbsp buttermilk Ingredients for cooking: 3-4 cups vegetable oil Ingredients to top: Mozzarella cheese Spaghetti sauce Oregano Directions: In a bowl, place all of the ingredients for the chicken together and whisk. Add chicken and marinate for 2 hours (or longer if you can). I just left it in the bowl, not covered, in the refrigerator.  In the meantime, start putting together the ingredients f

I normally don't do long introductions to a recipe but this one was hard to put together because of my mindset so I wanted to share a few things. Today is a hard day. I was watching the college Pro Bowl about an hour ago and the announcer said that "Cody Bryant" had died. I wasn't going to look it up because I had no idea who Cody Bryant was but something pushed me to do so. I went to the Yahoo homepage and saw multiple articles about Kobe Bryant passing away in a helicopter accident. This could not be real.
