I have been on my computer working on the SEO Hubspot Certification this morning and I'm really enjoying it.  Jace came in this morning and said, "Are you working?" and I said, "I'm just doing a few things" and he said, "I don't want you to work today" so once I'm done with this blog I'm going to hang out with him.  He starts school back up in three days which is so hard for me to believe. Also, the fact that he's going into 8th grade (and still wants to spend time with his mama) completely blows my mind.  Last night I made this Chicken Parm recipe from Clean Food Crush. Although it took awhile to make (it's not the easiest...or the cleanest), everyone wiped their plates clean! Chicken Parm has always been a family favorite (except Jace prefers to add Alfredo sauce to anything over spaghetti sauce). There were a lot of steps to this one but it was well worth it. I love switching out non-healthy ingredients for healthier ones wh

Today is a good day. It's usually a good day when I don't have anxiety. For those who don't know, most of this month was anxiety-filled and it was not fun. I pushed through and still accomplished a lot but it was really bad for me.  You can read all about it HERE . Since I'm finally feeling better, my days have felt happier and better. This makes cooking more fun and feeling accomplished throughout the day. I have also been spending a lot of the past week watching the Olympics. I have loved the Olympics for years. In fact, I remember when I went to bible college, I remember sitting in the shared living room and watching the Olympics with a bunch of people on this tiny TV. My Dad, when he was alive and when the Olympics were in Utah, actually went to the Olympics and worked the Olympics as a firefighter/paramedic which was awesome. I think that was in 2002. I'm a huge fan of the women's gymnastics and men's swimming. What do you like to watch? Anyways, last n

Baked Chicken Parmesan

Last night, alongside the Garlic Butter Rolls , I made this baked Parmesan Chicken. I've made a lot of Parmesan Chicken recipes in my life (see below) but this one was probably one of the best ones I have made. It seems like with baked chicken I either cook it too long or not as much as I should but I was able to find the perfect time for this one (different than the original recipe). The original recipe was from Yummly HERE . Ingredients: - 2 large boneless skinless chicken breasts, cut in half, horizontally - 1 1/4 tsp salt (1 tsp for chicken and 1/4 tsp for breading) - 1/2 tsp pepper - 1/3 cup flour - 1 egg - 1/2 cup panko breadcrumbs - 1/2 cup shaved Parmesan Cheese - PAM or cooking spray - 12oz marinara sauce Directions: Preheat oven to 375 degrees. Spray a cookie sheet with PAM or cooking spray and set aside. Cut chicken in half and season both sides with salt and pepper. Get three medium bowls - place flour in one, beat the egg in one, and in the 3rd o

I feel like it's been awhile with blogging - I have the intention of blogging and then things get in the way and life gets back to busy. Even working 16 hours a week, I still feel like my life is way busier than usual. Lately I have been doing product reviews for companies to earn some extra money and I have 14 product reviews written down. So these past few weeks, besides moving and still unpacking, I have been playing catch-up on reviewing and enjoying products. I also finally heard back from unemployment but I had to send them some paperwork in the mail because I think I accidentally inputted wrong information when I filed my claim. So life's been fun LOL. I have been cooking more and I am hoping to put together two blogs today, fingers crossed! This first recipe I made last night and it was Baked Chicken Parmesan with Spaghetti Noodles. This recipe was SUPER easy to make and I only used two large boneless, skinless, chicken breasts. The original recipe was from Skinny Tas
