Air Fryer Red Curry Chicken

Image
If you are looking for a really simple Air Fryer Curry recipe, this is it. I was pleasantly surprised at how well it turned out. This is another recipe from our Air Fryer Recipe Book that came with our new Air Fryer (which I love, by the way!) Initially it was for Chicken Wings but we did ours with chicken breast and it worked out perfectly.  Ingredients: 3 medium boneless, skinless chicken breasts, cut into chunks 1/4 cup No Salt sweet and sour sauce  2 tsp Red Curry Paste (we got ours on Amazon) 1 tsp Organic Soy Sauce 1 tsp garlic powder Directions: Preheat Gourmia Air Fryer to 350 degrees. In a large bowl, mix the sweet and sour sauce, curry paste, soy sauce and garlic powder.  Add the chicken to the bowl and coat with the sauce. Spray the air fryer basket with non-stick cooking spray. Place the chicken in the air fryer, making sure they are in a single layer. I had to do two batches due to how much it made.  Cook for about 22 minutes, flipping halfway. Serve with brown rice.

Air Fryer Chicken Hibachi

It's been awhile since I have blogged, and quite honestly, I have been experiencing hardcore burnout. I have attended a burnout webinar and workshop through my work without even being aware that I was experiencing it. I have already looked into a housecleaner, scheduled some family time and trying to do some things that my therapist recommended :)  One of the things I won't stop doing and absolutely love is cooking. Although, at times, it can be stressful, I do love making delicious food for my family. Last night was no different. Have you ever made Chicken Hibachi in the Air Fryer? It is amazing! The original recipe can be found HERE . We used garlic powder instead of garlic and everything else we kept the same! Ingredients for the chicken: 2 medium chicken breast, cubed 1 cup Zucchini 1 cup Squash 1/4 cup Carrots Ingredients for the sauce: 4 tbsp soy sauce 1 tbsp sesame oil 1 tbsp rice vinegar 1 tbsp garlic powder 1/2 tsp ground ginger 2 tbsp brown sugar, organic Instructions

Air Fryer BBQ Drumsticks

How is everyone's daylight savings time Sunday? Let me tell you, the time change has thrown me off. It's not even 3pm and it feels so much later. I already went to the market, worked a few hours, have dinner in the crockpot, and watched football. What a day already! A few days ago I made these BBQ drumsticks in the air fryer and I wanted to share the recipe (it can be found HERE ) from Valeries Kitchen because these drumsticks turned out amazing! They were fairly easy to make and anything in the air fryer is better than fried! I don't use salt in my recipes so I took out the salt and we also did not have the dry mustard so we removed both of those from this recipe. Ingredients for the drumsticks: A pack of drumsticks (I cooked two batches of 8) 2 tsp vegetable oil 1/4 cup BBQ Sauce (we use Guy Fieri's and it is sooooo good!) PAM cooking spray Ingredients for the BBQ Spice Mix: 2 tsp smoked paprika 1 tsp onion powder 1 tsp garlic powder 1/2 tsp dried thyme 1 tsp pepper,

Air Fryer Chicken Bacon Ranch Poppers

Last week I made these Air Fryer Chicken Bacon Ranch Poppers and they were surprisingly good and filling even for dinner! They were super easy to make and could even be perfect for Superbowl or a sports gathering! The full and original recipe can be found HERE . I wasn't sure how ground chicken would be but it was more like a meatball with cheese in the middle and bacon wrapped around it. Very, very good! Let me know your thoughts below! Ingredients: 1 pound ground chicken 6 bacon strips, uncooked 1/2 cup bread crumbs 1 egg 1/2 cup mozzarella cheese 2 cheddar cheese slices, torn into pieces to stuff inside the poppers 3 tbsp ranch dip seasoning Directions: In a bowl, mix together ground chicken, egg, bread crumbs, mozzarella cheese, and ranch seasoning until combined. Shape into balls. I made 7. Press the cheese slices into the center and form into a meatball so the cheese is in the middle. Wrap bacon around each meatball. Preheat Air Fryer to 350 deg
