Parmesan Chicken Bites

The noodles were cooked according to package and I added a swirl of olive oil for additional flavor. The chicken was cooked perfectly, and browned, which I love. The garlic butter added a unique touch. Jace, Kevin, and I cleared our plates!

Inspiration
The inspiration from this recipe came from Insanely Good Recipes. We made ours different by adding the parmesan cheese, removing salt (I never add salt in my recipes), using garlic powder instead of minced garlic and Italian Seasoning instead of chopped fresh parsley.

How to Store and Reheat Parmesan Chicken Bites
Although we didn't have leftovers, if you do, you can store them in an airtight container and keep them in the fridge for up to 4 days. Reheat in the microwave or on the stove.
Adjust to Your Liking
• These parmesan bites were perfect over a bed of pasta
• Kevin and I had marinara sauce and topped it with Italian seasoning
• Jace loves his with Alfredo sauce
• You can also eat them with a side of Asparagus or roasted vegetables
• Want to make it spicy? Add cayenne pepper or red pepper flakes in the garlic butter.
Ingredients for Parm Bites:
• 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
• 1 tbsp garlic powder
• 1 tsp black pepper
• 4 tbsp unsalted butter
• 2 tbsp garlic powder
• 3/4 of a 3/4 cup full of shredded mozzarella cheese and 1/4 of a 3/4 cup of grated parmesan cheese (do this twice with two batches)
• Italian seasoning, to top
How to Make Parmesan Chicken Bites (Step-by-Step)
✓ Step #1 Season chicken
Dice chicken and add to a large bowl. Season the chicken with the garlic powder and black pepper and toss to coat.
✓ Step #2 Make the pasta
Make the pasta according to the directions on the box. When done, drain, and add a few tablespoons of olive oil and mix.
✓ Step #3 Cook chicken
In a frying pan on the stove, heat 2 tbsp of butter over medium heat. Add half of the chicken in a single layer and cook on one side for 4 minutes until browned. Flip and cook 2-3 more minutes, until cooked all the way through.
✓ Step #4 Add cheeses
Add in your first 3/4 cup of cheeses and combine chicken and cheeses. Move to a plate. Heat .5 tbsp of butter and heat the remaining chicken and cheese the same way.
✓ Step #5 Make garlic butter
Add the remaining 1.5 tbsp of butter to the pan. Once melted, add 1 tbsp garlic powder and cook for 20-30 seconds, stirring frequently so it doesn't burn. Add chicken back in to the skillet and coat the chicken in garlic butter.
✓ Step #6 Make spaghetti and serve
If you want to make spaghetti, you will want to add a bed of pasta to a plate, top with chicken, top with your favorite sauce, and then finally, add a touch of Italian seasoning. Serve.
