Easy Baked Chicken Tacos
To me, baked chicken tacos are an upscale version of regular tacos. They are crunchy, the chicken is tender, the taco seasoning and sour cream combine together to make it flavorful and creamy, and with only six main ingredients, this will be one of the easiest taco dinners you will make. 

I cooked the chicken and taco seasoning in a crockpot in the late morning, and by dinnertime, the tacos were ready to assemble. I rated these tacos a 9/10 and Jace rated them an 8.5/10. We are huge taco fans around here!

This recipe is perfect for busy weekdays, weekends, and if you need a quick meal idea! The great thing about these tacos is you can customize them and make them your own!

What I Learned
My suggestion is to hold the tacos together with toothpicks. Since the corn tortillas are small, they don't lay flat like a bigger tortilla would. I used two toothpicks per taco - one at the top and one at the bottom. 

Next time I will be using three per taco because some did open up while cooking. I would recommend one at the top, one in the middle, and one at the bottom to make sure it closes and seals all the way.

Inspiration
This recipe was inspired by Eating Well but we added our own twists. We used shredded chicken breast instead of rotisserie chicken, eliminated the salt and used cheddar cheese instead of a Mexican blend. We also did not make the Avocado Cilantro Crema.

• *6 corn tortillas (I prefer Guerrero because that's my last name)
• *1 packet of less sodium taco seasoning
• 2 cups water
• 1/2-1 cup cheddar cheese
• 4-6 tbsp light sour cream
• 1-2 boneless skinless chicken breasts

• Avocado
• Shredded lettuce
• Taco sauce
• Cilantro
• Guacamole

How to Make Baked Chicken Tacos (Step-by-Step)
✓ Step #1 Slow cook the chicken
In a slow cooker add the water, chicken breasts and taco seasoning. Cook on high 3-4 hours, or low 5-6 hours.

✓ Step #2 Prepare your tacos
Wrap tortillas in a damp towel and add to the microwave for 30 seconds.

On a sheet pan, lay out a piece of parchment paper. Spray with cooking spray and lay out the six corn tortillas.

✓ Step #3 Add the seasoned chicken
Add 1/4 cup of seasoned chicken to each tortilla. Preheat the oven to 450 degrees F.

✓ Step #4 Top chicken with shredded cheese and sour cream
Top chicken with 1-2 tbsp cheddar cheese per tortilla. You can also add a tbsp of sour cream on the inside for a creamier taste.

✓ Step #5 Use toothpicks to secure tacos
Use toothpicks to secure tacos. I used toothpicks on both the bottom and the top of the taco to hold it together. I would also recommend adding a toothpick in the middle as well.

✓ Step #6 Bake the tacos
Add the tacos to the oven and bake at 450 degrees F for 15-17 minutes. 

✓ Step #7 Serve immediately
Add your favorite toppings and serve immediately.
