Easy Crockpot Chicken Tacos

Looking for a simple and tasty Chipotle chicken taco recipe that’s perfect for weeknight dinners? This easy slow cooker chicken recipe is a hit with the whole family! It is easy to prepare, full of flavor and everyone in the family will love them!
I adapted the recipe from Southern Living's Instant Pot version (which I don’t use) to make it slow cooker-friendly. Throw it together in the morning, and by dinnertime, you’ve got a cheesy, flavorful meal with a mild kick that the kids will love!

How to Customize Chipotle Chicken Tacos
The toppings and customization is completely up to you! You can add more salsa, sour cream, shredded lettuce, Pico de Gallo, or green onions. You can also swap out chicken thighs for chicken breasts and add different seasonings such as onion powder and black pepper.
Ingredients for Chipotle Chicken Tacos

• 4 boneless, skinless chicken breasts
• 1 jar mild salsa
• 3 tbsp honey
• 1 1/2 tbsp sauce from Canned Chipotle Chilies in Adobo sauce (we used the sauce only)
• 1 tsp garlic powder
• Flour tortillas
Directions for Easy Slow Cooker Tacos:
1. In a slow cooker add the chicken breasts, salsa, honey, adobo sauce, and garlic powder.
2. Turn slow cooker on high for 4 hours.
3. After 4 hours, shred chicken with two forks.
4. Cook an extra 30 minutes if needed.
5. Add to tortillas and top with cheese, sour cream, Pico de Gallo and any other toppings that you prefer.
Store leftover chipotle chicken in the refrigerator for up to three days. It also makes a great topping for salads or in wraps!
